I felt that has been a long time since our last cheese post, right?! After the holidays and the attempt to eat as clean and light as possible (it didn’t last for a long time!) Marilyn brought home this creamy with bacon flavor and spoonable cheese that we ate without no sacrifice. Do you know that this cheese is made only in the Winter? To according to Jasper Hill Farm when the cows are giving rich, hay-fed raw milk. We paired this cheese with a Syrah, but would be very nice with a dry rosé, just in case if red wine is not your favorite. Enjoy it!!
We ate with crostini and with smoked paprika coins!!
