Last week in Seattle it was 90 degrees and the only thing we were wishing for was a house with central air conditioning or to be by a pool! It was impossible to be inside of the house and the only thing that came to our mind was an ice cold drink, specifically something with watermelon (the perfect summer fruit for hot days!!) with some liquor. Marilyn is not a big fan of tequila, but I love it!! So, I decided to make a watermelon caipirinha with a sweet mint rim for Marilyn and for me I made a salty version: a watermelon margarita with a salty mint rim and feta cheese. Both drinks were refreshing and delicious!! It’s all about your favorite liquors and flavors. So, which one is your favorite? Is it watermelon caipirinha or margarita??
3 cups watermelon
1 cup white tequila (it depends on how strong you want your drink)
1/4 cup Triple Sec
2 fresh limes, juiced
2 sliced watermelon (wedges) as a garnish
3 cups watermelon
To get the watermelon flavor to really come through don’t mix it with water.Place chopped watermelon in a blender and blend on high until liquified. (For both drinks I used the the same blended watermelon).
For the caipirinha rim I ground the mint and added margarita sugar. For the watermelon rim I used kosher salt because I didn’t have margarita salt at home. It’s hard to make it stick to the rim, but with a little effort you can do it.
I made watermelon iced cubes with a mint leaf inside for two reasons: first of all, it looks prettier than regular ice cubes. It also looks more appealing and when the ice starts melting and the margarita doesn’t taste watered down. I used the same watermelon ice cubes for the caipirinha too. Although, for the caipirinha I had to mix the watermelon cubes with regular ice. Why? Because for the caipirinha it’s straight liquor, without lime juice or triple sec so I thought it was too strong.
For the watermelon ice cubes I made from the watermelon blended juice and add on top a mint.
For The Watermelon Margarita
Rub the rim of 2 glasses with the lime wedge. Dip each rim into the salt/sweet (your favorite flavor) mint to coat.
Fill the glasses with ice and pour in the margarita mixture, being careful not to loosen the salt.
Garnish: I made a watermelon skewer with lime and sprinkled feta cheese on top.
For the Watermelon Caipirinha
Rub the rim of the glass with the lime wedge. Dip the rim into the sweet mint mixing to coat. Add the watermelon ice cubes and regular ice and pour in the cachaça.
Garnish: I cut a small slice of watermelon into a triangle, sliced the flesh and placed on the rim.
Makes 2 cocktails.
