THINGS THAT MAKE ME SMILE

Things make me smile this week started with the photos that were taken by my French friends while they were here and visiting the Space Needle. space12

If you think of  Seattle what comes to your mind?.. Gray’s Anatomy, rain, Microsoft and lately the book 50 shades of grey??? Space Needle, of course!!! lol

Built in 1962, the Space Needle has  become the symbol of Seattle, and one of the most recognizable structures in the world. Definitely a must see while in Seattle. The views from the top are amazing and you can even have beer or wine. Once you’ve seen enough you can go  to the gift shop where it would be nice to get a little item for your memory in the gift shop. For more informations here.

I love popcorn! A couple of weeks ago we made some of this delicious snack. People were very surprised when they noticed we were making it in the old fashion way (here). We don’t have a microwave! What made me smile is that some of the young generation has never had popcorn made without a microwave!! Isn’t that funny??!! At the same time it is scary to see them eating everything from a microwave….

Last year Marilyn toasted pumpkin seeds but I don’t know why , but I wasn’t a big fan. This year I made that shrimp in the pumpkin (here) she told me immediately to put the seeds aside. She let them dry for 2 days and toasted them. It was so good and tasty. These pumpkin seeds this time tasted  like peanuts. I was very happy and it made me smile when that I learned how to eat one more healthy food. The health benefits of pumpkin seeds here.

To preserve the health benefits of the oils found in pumpkin seeds, eat them raw or roast them on a baking sheet on low heat in the oven (about 170 F) for 15-20 minutes. Toss with a sprinkling of sea salt and enjoy. If you haven’t tried them warm, you’re in for a real treat! Add  pumpkin seeds to salads, dips, or ground in pesto.

Finally we bought  the juicer that we’ve been talking about for a couple of weeks here and here !… It is unbelievable how different and tasty it is when you make a fresh juice from vegetables. It is a GREAT way to introduce veggies to the kids or even to some people that hate greens. I feel so great after I drink my green juice or even better when I drink a green martini  The best part …without any sacrifice to drink it!! Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
