THE POWER OF HOMEMADE DRESSING

The holidays just started and I know I didn’t do everything that I told myself I would do. Like, only eating whatever I want on Thanksgiving day not the day before, not the day after… And I forgot to mention that I didn’t exercise at all, even making myself believe the only day I wouldn’t exercise would be on Thanksgiving day. So, I don’t need to say again that I didn’t accomplish anything I wanted, right?! And I’ve already noticed the combination of excess food + drinks +no exercise =Β Β I felt some of my clothes getting tighter!!. Urrggg

Different from previous years, I’m not going to wait for the end of the holidays to start my “balanced” lifestyle lol . So, I proposed to Marilyn to start a 30 day challenge of diet and exercise (Christmas break). We started yesterday!! Yes, Sunday!! On our diet there’s nothing crazy (I have done so many crazy diets and I learned that it doesn’t work for me) we eat more salad with any type of meat, avoid carbs and sweets and exercise more.

To start off this 30 day challenge we made this delicious Iceberg Wedge salad. Marilyn made this homemade blue cheese dressing. Here is the recipe.

Ingredients for the salad

1/2 head of iceberg lettuce cut into 4 wedge size servings
1/2 cup cherry tomatoes diced
4 slices of bacon cooked and diced
Crumbled blue cheese

Ingredients for the dressing:

1 cup mayonnaise
1 cup sour cream
3/4 cup buttermilk
1/2 teaspoon pepper
2 tablespoons minced shallots
4 dashes Tabasco sauce
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1 tsp cayenne pepper
1 teaspoon minced garlic
1 tablespoon white vinegar
10 ounces crumbled blue cheese

Mix mayonnaise, sour cream and buttermilk until smooth. Β Combine with the rest of the ingredients until smooth.

Preparation

Start baking the bacon on a rack to let the fat drain off the meat.

While the bacon is in the oven you can start cutting the iceberg lettuce in wedges.

The same with the tomatoes.

Place a wedge of iceberg lettuce on a plate. Spoon the blue cheese dressing over the lettuce.

Cook your eggs to your taste. We like them soft inside.

Top with tomatoes, bacon and blue cheese crumbles. Garnish with a little freshly cracked black pepper.

    My Mom used to make something so similar. Even as a kid I liked it! Simple,.. and so good.

    • And Kathy what I love the most about this dressing is that you make the way you want with more or less gorgonzola, more salty or not…

Brazi Bites JalapeΓ±o Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. JalapeΓ±os

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeΓ±os and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeΓ±os and small dice.

In a medium bowl mix diced jalapeΓ±os, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeΓ±o mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
