THE MOST AUTHENTIC BRAZILIAN CHEESE BREAD (PÃO-DE-QUEIJO)

This recipe is the most authentic recipe of Brazilian Cheese Bread. It’s delicious and naturally gluten-free.

THE MOST AUTHENTIC BRAZILIAN CHEESE BREAD (PÃO-DE-QUEIJO)

Pão-de-queijo is a Brazilian staple that is a cheese puff in a ball shape, chewy, delicious, gluten free  and very addictive. I haven’t met one person that tried them and didn’t like them. Every time  I open my mouth and I say a couple of words to a stranger the first question that comes from them is where I’m from. I don’t know why, but most people can’t place my accent (according to 9 people out of 10). The second question is not about soccer, samba, Rio de Janeiro, Girl of Ipanema or Caipirinha but about the Brazilian cheese bread or pão-de-queijo (the name in Portuguese).  My grandma has been making this recipe for over 70 years  and we asked her for the recipe!! We took some of the photos in her house, so there’s a special meaning in this post for me!! I made some adaptations to be possible to find all the ingredients in the U.S.. The only ingredient you can’t substitute is the tapioca/sour starch. For this recipe I used sour starch, but you can use tapioca flour.

Ingredients
  • 500gr or 17.5 oz of (Brazilian sour starch)
  • 1 cup vegetable oil
  • 1 cup water
  • 1 teaspoon salt
  • 4 large eggs
  • 4 cups shredded parmesan cheese
  • 1 cup milk
Instructions
  1. Preheat oven to 400°F.
  2. Prepare a greased baking tray or you can use foil.
  3. In the bowl place the flour.
  4. Wet the flour with room temperature water, this is what will help hydrate the starch.
  5. After adding the water, knead the dough with both hands to break up all the little stones created from adding the water.
  6. In a medium saucepan, heat vegetable oil, milk and salt over moderate heat until it comes to a boil. Turn off the heat and let cool slightly.
  7. Remove from heat and it to the starch, mixing and kneading with your hands (just be careful because the mixture is still hot) until everything is well incorporated.
  8. At this point the dough begins to have more consistency.
  9. Knead it for a few more minutes and add the eggs one by one.
  10. Finally add the grated cheese and knead some more.
  11. The dough will be quite sticky.
  12. Put some oil in your hands to keep the avoid the dough from sticking to your hands.
  13. If you think that the dough is too soft, add less eggs, if it's too dry, add a little milk.
  14. Shape dough into small balls and bake until golden on top about 25-30 minutes.
  15. The Brazilian cheese bread are at their best when they're still warm from the oven.

    Ah pon de quejo! I’m Brasilian on my mothers side and have been to Brasil three times now. My family’s recipe is in Portuguese, and sadly, I don’t read or speak the language!     Help please! I was so excited to make this for my gluten free family. I followed the recipe as above but instead of flour I have soup not dough and I haven’t even added the eggs yet! Is there some way I can salvage this?

      OMG!! Are you using tapioca flour or sour starch? I can’t imagine what went wrong!!! You could add more flour and cheese to save the recipe. Let me know if you saved the recipe?

      Mine turned into soup as well. I do not see a picture of the boiled 1 cup milk, 1 cup oil and salt. I’m up to 24 oz flour (the package is tapioca flour/starch) and 1 egg. Hope it comes out, opening ceremony is in 40 minutes!

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
