THE MAGIC OF LEFTOVERS!!!

I LOVE it when I can use leftovers to create brand new dishes…and I did just that when we made our pulled pork last week!  We had so much pork leftover that I wanted to do something more than just make more sandwiches…so I got BUSY!!  Imagination, research and just plain cravings helped me decide what I wanted to cook….I do this with any leftovers we have….don’t throw it away….make something different and imaginative with it!  Here are a few ideas of how I used all of the pulled pork we had left….Hope you enjoy and get some inspiration!!

Pulled Pork BBQ Pizza

To save time, I bought pizza dough at the store, but you could easily make your own.  This was a super quick and easy dinner!! I cooked the whole pizza on the grill, but you can also do it in the oven.

Preparation:

Pizza Dough For The Grill:

Oil a large baking sheet and place pizza dough on it.

Stretch with your palms and fingers into a 13×9 rectangle.

Lift onto the hottest part of the grill.

Grill for 1-2 minutes until bottom becomes crisp.  Move to a cooler side of the grill and brush top with oil.

Toppings:

Here’s what I used from my leftover pork.  Use as much as you want of each topping to make your perfect pizza!

bbq sauce (from the rib recipe)

shredded mozzarella cheese

shredded pepper jack cheese

thinly sliced onions

thinly sliced peppers

Layer mozzarella, sauce, pork, pepper jack, onions and peppers.

Add toppings and cook for 2-4 minutes until cheese is melted and toppings are heated through.

Move to hot part of grill for additional 1-2 minutes to finish and cook evenly.

BBQ PORK NACHOS

We made these as a great quick snack to go with cocktails (here). I made a delicious corn, black bean and mango salsa to go with them.

Salsa:

Like the pizza, use the amounts of each that fits your own taste.

corn

black beans

diced mango

diced onion

diced jalapeño pepper

chopped garlic

diced tomato

lime juice

cilantro

salt and pepper

Mix together in small bowl until combined.  Set aside.

Pork for Nachos:

Leftover pulled pork.

pepper jack cheese, (or cheese of your choice) shredded

Heat tortilla chips in oven until warm. Add pulled pork on top of chips, then shredded cheese.  Heat until cheese is melted.

Place on platter.  Serve with salsa and enjoy!!

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
