THAI CHICKEN WINGS AND GRILLED BOK CHOY!

Ludmilla and I have a favorite spot for happy hour…it’s a local Thai restaurant and their food is amazing!!! So one night Lud said “can’t you make those spicy wings?”  I was like, “I don’t know, let’s try!” So I did, and I think I came up with something very close.  I usually bake these wings, but on this warm summer night I decided to grill them and add a side of one of my favorite Asian vegetables…bok choy.  It was a super quick, easy and delicious dinner….you can do it in your oven or on the grill…either way you will love it!!

Thai Wings:

1-2 lbs. chicken wings

1 c. Sweet chili sauce

1 c. Chili garlic sauce

2 T. soy sauce

2 T. chopped ginger

toasted sesame seeds

Preheat oven to 400 degrees

Mix chili sauce, garlic sauce, soy sauce and ginger in large bowl until combined and set aside.

Grill or bake chicken wings until almost done – 155 degrees, approximately 15-20 minutes.

Toss with sauce to coat and return to grill or oven.

Finish cooking until 165 degrees and sauce has set and beginning to caramelize.

Top with toasted sesame seeds.

Add more or less of the garlic and sweet chili sauces to your liking..I like more spice so I usually kick it up a little more with the chili garlic….play around with it!!

Grilled bok choy:

1-2 lbs. baby bok choy

olive oil

salt and pepper

Vinaigrette:

1/4 c.  sweet chili sauce

1 T. rice wine vinegar

1 tsp. brown sugar

1 tsp. sesame oil

1 tsp. soy sauce

Whisk ingredients together until combined.  Set aside.

Cut bok choy in half lengthwise through the core.  Toss with olive oil, salt and pepper in bowl to coat.  Place on grill and cook until crisp tender.  Toss with vinaigrette.

    Que beleza! Vou experimentar as asinhas. Tenho todos os ingredientes, só falta o molho de alho apimentado, que não consegui achar (vou ter que adaptar).
    Quanto ao bok choy, vou ter que esperar. Não consigo acha-lo no interior de SP.

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
