TENDERLOIN CROSTINI

If you live in Washington state you know that the only subject the residents have been talking about lately is in regards to the Seahawks. Nothing else matters until this coming up Sunday when we will win the Super Bowl one more time!! How exciting  is that?? Two championships in a row  would be amazing!!! We have the 12th man bottle of wine and we also wanted to make some different food for the  Super Bowl besides chips with salsa, chili or wings. We created a beef tenderloin crostini with carrot spread that you can make the day before everything. I would spread the carrot on the crostini a half hour before the guests arrive or you can invite the guesst to do it themselves. The sauce is a keeper and you can use it in so many ways!!

INGREDIENTS:

Carrot Spread

1 1/2 lbs. carrots, peeled and cut into 1 inch pieces

2 T. chopped, fresh marjoram

3-4 T. olive oil

kosher salt and pepper

1 T. minced garlic

Bordelaise sauce:

1/2 c. cabernet

5 oz. sliced shallots

9 1/2 oz. sliced carrots

2 1/2 oz. sliced mushrooms

2 1/2 oz. sliced garlic

10 parsley sprigs

5 thyme sprigs

2 bay leaves

3 whole peppercorns

2 c. demiglace (recipe)

Preheat oven to 400F.

TENDERLOIN CROSTINI

Mix carrots, marjoram, olive oil, salt and pepper and garlic together.  Place onto a  sheet pan and roast until carrots are fork tender, 35-40 minutes.  Place into a food processor and process until combined and creamy, if needed add more olive oil to combine.  Spread it on top of crostini.

TENDERLOIN CROSTINI

Place seared beef tenderloin on top of that and drizzle with bordelaise sauce.

For the sauce

Combine all except peppercorns and demiglace into a medium saucepan and reduce by 2/3 over medium low heat.

PS . This makes a lot of sauce…..you can use it for seared steak or anything really!  It’s worth the work!

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
