SWEET AND SPICY MEYER LEMON WINGS

We bought some meyer lemons the other day because, WE LOVE THEM. We don’t always have them here in Seattle so we always snatch them up.  So, I was (Marilyn ) seriously craving a different kind of chicken wing (we love our wings in our house :).  Remember when we made the piri piri shrimp?  Well…I had an idea and it was delicious!! The quick preserved meyer lemon from the piri piri sauce and the marinade make an amazing chicken wing! Who knew?? I added some maple syrup to create a sweet/spicy mix and we loved it!  I really love it when I can use recipes for different uses and this is a perfect example!!  You could make a double batch of the piri piri sauce/perserved lemon and use it for surf and turf!!!  Give this one a try and let me know what you think. This sweet and spicy Meyer lemon wings is one of my favorite wing recipes now!!

SWEET AND SPICY MEYER LEMON WINGS
 
Ingredients
  • 3 lbs. chicken wings,
  • 1 c. maple syrup
  • 1 recipe [piri piri marinade http://brazilianflairintheusa.com/piri-piri-shrimp-wrap/]
Instructions
  1. Place wings with Piri Piri/maple marinade into a ziplock bag and marinate for 1-2 hours.
  2. Preheat oven to 425F.
  3. Line a baking sheet with parchment paper and put a baking rack on top.
  4. Spray the rack with cooking spray.  
  5. Remove the wings from the marinade and place evenly over the baking rack.  Reserve the marinade.
  6. Bake for 35-40 minutes, turning over halfway through.
  7. While wings are baking, place reserved marinade in a sauce pan, adding ¼-1/2 c. more maple syrup depending on the sweetness desired.  
  8. Boil the mixture for 5-8 minutes, until thick.  Set aside.
  9. When wings are done, toss with reserved sauce and serve topped with meyer lemon peel.

    This Sweet & Spicy Meyer Lemon Wing recipe looks so incredibly scrumptious! My family loves chicken recipes that include lemons, so I’ll definitely need to try this one out. And I love that you’re from Brazil. My younger daughter has a wonderful friend from Rio de Janeiro, and a few years ago she spent a beautiful summer with her friend in Brazil. This gorgeous destination is on my own travel wish list!

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
