SUNDAY MORNING

For a lot of people Sunday morning is the day to make a special breakfast or a late brunch with eggs, bacon, breads, fruits, yogurt, bloody-marys and more, much more… In our case, this type of breakfast is on our table everyday. We love breakfast and we believe that having a breakfast filled with all kinds of proteins and fruits will keep you full and satisfied for most of your day, especially if you have a busy schedule like we do.

Marilyn’s daily  breakfast is FAGE’ greek yogurt with fruits, honey and granola. She adds all types of berries, whatever is available,  you can imagine!

Fruit and yogurt doesn’t fill me up, so it’s not my thing to eat very often for my breakfast.

As you know I am always trying to eat healthy food (I have been struggling with my weight since I was a teenager) and finally I found a source of food that makes me full and satisfied, not hungry at all. And guess what it is? EGGS!! And I used to hate eggs! I never in my life ate eggs.  I remember when I moved to the US and I had a Cobb salad for the first time ever in my life. The salad had bacon, tomatoes, avocado, etc, etc, and eggs. I mixed everything and it tasted so good. So little by little I started adding eggs to my diet . After that I started doing the protein diet… and I was surprised that after eating hard boiled eggs I didn’t feel hungry later.

But the ‘TOUCHE”” moment was when my favorite chef made scrambled eggs for me. I remember telling Marilyn while she was cooking that the only type of eggs I would eat was hard boiled eggs. That was it! Her answer was: just try it! I did it and I haven’t stopped eating eggs every morning since then. Even when we were in Brazil I ate them!! My family was freaking out!! lol I have been losing weight since last year and one of the reasons are my eggs every morning.

Most of the time my breakfast is also my lunch, I add a lot of veggies… Whatever I have in my fridge! Normally it is asparagus, spinach, tomatoes, peppers, bacon, kale, raisins and if I have any type of leftover meat… Of course, I would add it also!!

Last week she made a fritatta (I never had it before) and I loved it!! Its almost like a pie but without flour. Super healthy and filling!. You make it the same way as scramble eggs. The only difference is the pan you’re going to use to make it in, and you finish it in the oven.

The last touch: add parmesan cheese on top and enjoy it!

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
