SUMMER PEACH SOUP

If you haven’t realized it yet, we are CRAZY for peaches!! They are Ludmilla’s favorite fruit so….the first time we saw them she wanted to get some and get busy with cooking them!!  For me especially, (Marilyn), I’m not used to having fruit all year ’round like they have in Brazil, so I’m as crazy as Ludmilla is when summer arrives and we have all of these amazing fruits available to us!  Well, now they are in full season here in Washington so we are going even crazier with what we have!!!  So….since it’s been so hot here in Seattle we decided to make another peach soup.  If you’ve been following our blog (if not, you should! :)), we did a  peach soup last year which was delicious, but a little time consuming.  This recipe is super easy, fast and no cooking involved!  Perfect for this summer heat!!  We topped this soup with goat cheese and prosciutto wrapped peaches…OMG…it was sooooo good!  Hope you enjoy it as much as we did!  Happy Summer everyone!!!

Summer Peach Soup

Ingredients

6 fresh peaches, peeled and cut into chunks

1/2 c. fresh orange juice

1/2 c. full fat coconut milk (unsweetened)

pinch of salt

juice of 2 limes

1 tsp. vanilla

1/2 tsp. almond extract

1/4 c. honey

fresh goat cheese

6 slices thin prosciutto

Summer Peach Soup

Directions

Place peaches into boiling water for 1 minute. Remove and place into ice water to cool.  Peel the peaches. Save  for the garnish and and cut the rest into chunks.

Combine cut peaches and remaining ingredients into a blender and blend until smooth.  Refrigerate for at least 1 hour to chill.

With remaining peeled peach, wrap with prosciutto and grill or bake until prosciutto is crisped and caramelized.

Place soup into a bowl and garnish with goat cheese and prosciutto wrapped peaches.

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
