SUMMER FRUIT SALAD

I can’t start this week’s post without saying how happy we are regarding the decision of the Supreme Court. Marilyn and I share the same opinion about accepting the difference. To accept the difference doesn’t mean that you agree or that you need to do the same. No, you don’t!!  That’s called freedom.  Freedom to look at someone who has different values or beliefs than yours and move on. Last Saturday, I saw a family who, every time I see them, I learn more about them and my love toward them  just grows. Danielle, a vegetarian almost vegan married to Frank, -the carnivore- and Emmi, the cutest little girl, still deciding her way… That night she had steak at her friends house, but she told me that after a video that her mom showed her about pigs being tortured, she doesn’t eat bacon or pork anymore. So, that night driving back home I was thinking about this family and how amazing their respect is for each other and that they exercise the freedom to make choices on their own. I love the way Emmi has been guided to make her own decision later on!!! Cheers to freedom! Cheers to the differences!! Cheers to love!!

How beautiful are these two paragraphs of the Court’s opinion: “No union is more profound than marriage, for it embodies the highest ideals of love, fidelity, devotion, sacrifice, and family. In forming a marital union, two people become something greater than once they were. As some of the petitioners in these cases demonstrate, marriage embodies a love that may endure even past death. It would misunderstand these men and women to say they disrespect the idea of marriage. Their plea is that they do respect it, respect it so deeply that they seek to find its fulfillment for themselves. Their hope is not to be condemned to live in loneliness, excluded from one of civilization’s oldest institutions. They ask for equal dignity in the eyes of the law. The Constitution grants them that right. The judgment of the Court of Appeals for the Sixth Circuit is reversed. It is so ordered. ”

same sex marriageHere is one salad recipe that we just loved!! The process of recipe creation is that we never know how it’s going to end up. Sometimes, it turns out horrible and sometimes it turns out the best salad we ever had. This is the case with this salad!! The mix of fresh peaches and cherries, mixed greens, the spiced pecans and the goat cheese dressing… We ate thanking this beautiful and healthy dish!! We wish you an amazing week!! 

SUMMER FRUIT SALAD

Ingredients

Fresh bing cherries, pitted

Fresh peaches, pitted and sliced

Fresh greens:  a combination of:

radish sprouts or alfalfa sprouts

Micro radish mix

Organic herb mixed greens

baby spinach

Edible flowers

Spiced pecans (recipe follows)

SUMMER FRUIT SALAD

Goat Cheese Buttermilk Dressing

4 ounces goat cheese, room temperature

3 T. buttermilk

1 tsp. honey

1 tsp. white wine vinegar

2 T. olive oil

1/4 tsp. pepper

pinch salt

1 T. chopped fresh tarragon

In a medium bowl, whisk together all ingredients until incorporated.

SUMMER FRUIT SALAD

Spiced pecans

1 tsp. sweet paprika

1/2 tsp. ground coriander

1/4 tsp. cayenne pepper

1 tsp. salt

1/2 tsp. freshly ground black pepper

1/2 c. sugar

2 T. butter

2 c. pecans

SUMMER FRUIT SALAD

In a small bowl combine the paprika, ground coriander, cayenne pepper, salt and pepper and set aside.

In a medium saucepan over medium heat, add the sugar and cook until all of the sugar is melted and light brown in color.  Carefully whisk in the butter.  Add the spice mix and turn off the heat.  Add the pecans and stir with a rubber spatula until all of the pecans are completely coated.  Spray with nonstick cooking spray which will help the pecans separate.  Once all of the pecans are coated turn out onto a greased sheet tray lined with a silicone mat.  Break up any pieces that may be stuck together.  Let cool 5 minutes before serving with the salad.

    I am also extremely happy regarding the decision of the Supreme Court even though I don’t live in the U.S. I definitely believe in equal rights for everyone so I feel like the Supreme Court made a great (and the right) decision.

    The salad looks so delicious! I think I have to show this recipe to my mom – she really likes vegetable-fruit combinations.

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
