SUMMER FRUIT COBBLER

We LOVE desserts in this household, and when summer comes, all of the fruits make me so excited to create anything and everything I can during this short season.  I had peaches, plums and blueberries in our fridge and I was like…COBBLER!!! Let’s do it!!  So here is the recipe I came up with.  We loved this summer fruit cobbler and you will too!

Summer Fruit CobblerSUMMER FRUIT COBBLER

Ingredients for summer fruit filling

2 lbs. peaches, peeled, pitted and sliced

1 lb. plums peeled, pitted and sliced

2-3 c. fresh blueberries

2/3 c. packed light brown sugar

1 T. lavender honey

2 tsp. freshly grated ginger

1 tsp. cinnamon

kosher salt

1/2 c. all-purpose flour

SUMMER FRUIT COBBLER

Biscuits

1 2/3 c. flour plus more for rolling out dough

1/4 c. sugar

2 T. baking powder

1/4 tsp. sea salt

6 T. cold, unsalted butter, cut into pieces

2/3 c. buttermilk plus more for basting

Course vanilla sugar for sprinkling biscuits

SUMMER FRUIT COBBLER

Directions

Preheat oven to 350F.  Butter a 11×7 baking dish with butter and set aside.

Toss peaches, plums and blueberries in a bowl with brown sugar, honey, ginger cinnamon and salt.  Sprinkle in flour and mix.  Place into the baking dish and set aside.

SUMMER FRUIT COBBLER

To make the biscuits

Whisk flour, sugar, baking powder and salt together.  Cut butter into the mixture with a fork or pastry blender until pea sized.  Add the buttermilk and stir until combined.  It will look rustic…this is what you want.  Turn dough out onto a lightly floured surface and knead to bring it together…don’t work it too much or the biscuits will be tough.  Pat into a 1/4 inch round and cut out biscuits with a 2 inch cutter, rerolling the scraps until you get 8 biscuits.

SUMMER FRUIT COBBLER

Arrange biscuits on top of the filling.  Brush with buttermilk and sprinkle with vanilla sugar.  Bake until biscuits are golden and the filling bubbles, 45-50 minutes.  Cool on a wire rack and serve with ice cream or by itself.

    Rosa begged me to make this for her breakfast tomorrow morning. After much arm twisting( yah, right!) I agreed! I love the mix of fruits you used, as I will be using a mix of peaches, strawberries, raspberries, and blueberries! And whipping fresh cream to go on top- as well as, vanilla ice cream.

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
