These flavorful stuffed peppers are high in fiber and very filling. Serve this with a side salad for a complete meal. This is a great way to use up leftover with any type of meat you have.I used leftover pork and salsa from the previous recipe (remember) with this one….recycling is in lol!!!! It is a healthy comfort food!!
3-4 poblano peppers
Leftover pulled pork
diced red pepper
shredded pepper jack cheese ( or cheese of your choice)
salt and pepper
avocado, mashed with salt and lime juice
Roast peppers in the oven or on the stove top until skin blisters.
Put in large bowl, cover tightly with plastic wrap and let sit 30 minutes.
Peel skin off of the peppers, make a slit down the pepper being careful not to break it open too much, and remove seeds from the middle. Set aside.
Saute onions, pepper and garlic in olive oil until tender.
Add pulled pork, cumin, coriander, chili powder, salt and pepper to taste. Heat through.
Fill peppers with pork mixture and top with shredded cheese.
Bake in 350 degree oven until cheese is melted.
Top with salsa and guacamole.
We had it drinking margarita!! It was amazing!!
