STEAK WITH FOUR CHEESES CRAB SAUCE

One of the most frequently asked questions that Marilyn and I get since we started our blog is: How can you guys eat all that food you cook and not be fat? Seriously, all the time! lol And our answer is always the same and very simple. We eat very healthy, lots of protein, veggies and almost exclusively homemade food. If you read this blog for awhile you know that I (Ludmilla) have been on all the craziest and not craziest diets in the world.  For the first time in my life I feel I am not on diet. I eat delicious food, I still drink daily my wine or cocktail and when I am craving  sweets I give myself a treat. Here is an example of our “secret” to not gaining  weight. Actually, I can tell you that we have been losing weight since we decided to take very seriously the homemade lifestyle. Marilyn made the steak and asparagus both seasoned with salt and pepper only and to break that boring combination of protein plus veggies, she made a sauce with leftovers from  4 cheeses and crab we had in our fridge. Use whatever cheese you love and as many as you like.  These were leftover from our dinner so I used them!  We have a video on our Instagram (here). Happy Easter, my friends!!

STEAK WITH FOUR CHEESES CRAB SAUCE

Easy Crab with four Cheeses Sauce

Ingredients:

8 oz. dungeness crab

1 T. minced  shallots

1 T. minced garlic

1 T. chopped fresh thyme

1 c. dry white wine

1/2 c. cream cheese

2 oz. LaTur

2 oz. Rossini Blue cheese

2 oz. grated Parmesan

1/2 bunch chopped chives

salt and pepper to taste

If you sear  your steaks in a pan use the leftover drippings (after pouring off the oil) to add that great flavor to your sauce!

STEAK WITH FOUR CHEESES CRAB SAUCE

Directions:

In your steak pan, sauté shallots garlic and thyme for 1 minute.  Deglaze with wine and reduce by half.  Add cream cheese, LaTur and blue to the pan and melt over medium heat, stirring constantly until cheese is melted together.  Add parmesan, crab and chives. Season with salt and pepper.

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
