STEAK WITH BLACKBERRY SAUCE

Last week  I looked in our fridge and saw so many blackberries that I hadn’t used yet!  It was dinner time and I was wondering how to incorporate these amazing berries in our dinner….Voila!  Steak with blackberry sauce!! So many savory dishes are even more amazing when you add fruit to them…sounds crazy but they really do compliment each other.  You have sweet, tart, savory, rich….the flavors work so well together!  We loved it!!!  You could make this with any type of fruit really….raspberries, figs, blueberries….try something different with your steak … you won’t be sorry! I decided to serve with the blackberry steak this delicious garlic rosemary flan with arugula salad. I know that this combination seems hard to make but it wasn’t. You can make the flan two days before, as well as the blackberry sauce and the lemon salad dressing. So, when the dinner comes the only thing you need to make is the steak and plate everything!

STEAK WITH BLACKBERRY SAUCE

Ingredients:

2 ribeye steaks

1 c. fresh blackberry puree

1/2 c. red wine

2 T. minced shallot

1 T. minced garlic

1 T. chopped, fresh rosemary

1 tsp. chopped, fresh thyme

1-2 c. beef stock

2 T. honey

2 T. unsalted butter

1 T. dijon mustard

kosher salt and pepper

Directions

Season steaks with salt and pepper.

STEAK WITH BLACKBERRY SAUCE

Preheat a pan over medium high heat.  Drizzle 2 T. olive oil in the pan and when it begins to smoke add steaks.  Sear steaks until caramelized, approximately 3-4 minutes on each side for medium rare (or cooking until desired doneness depending on the thickness of the steaks). Remove steaks from the pan and set aside.  Drain all but 1 T. oil from the pan.  Over medium high heat add shallots, garlic, rosemary and thyme.  Sauté for 1 minute.  Add wine and reduce by half.  Add stock, dijon, honey and blackberry purée. (We have a video on Instagram) Reduce by half and whisk in butter.  Season with salt and pepper.  Serve on top of the steaks.

STEAK WITH BLACKBERRY SAUCE

Garlic Flan:

I learned this recipe from a former chef, Jerry Traunfeld.  I changed it to match our own tastes.  It is amazing and so versatile.  You could use whatever herbs and spices you love and it would still be delicious.!!

STEAK WITH BLACKBERRY SAUCE

Ingredients:

12 garlic cloves, peeled

1 c. chicken or vegetable stock

4 sprigs fresh rosemary

3 sprigs fresh thyme

2 eggs

2 egg yolks

pinch of salt

pinch of pepper

1 1/2 c. half-n-half

1/2 c. heavy cream

1 T. unsalted butter, plus

Directions:

Preheat oven to 325F

Slice garlic cloves and place into a medium saucepan with stock and 1 tablespoon butter.  Simmer until almost all liquid is evaporated and garlic is cooked, approximately 20 minutes.   Mash garlic with a fork against the side of the pan and add cream and half and half.  Bring to a boil and add herbs.  Turn off heat, cover and let sit to steep for at least 30 minutes.

Butter 6 ramekins, 4 oz. each, and set in a shallow baking pan. Pour garlic mixture through a fine sieve into a medium bowl, pressing down to extract all liquids.  Whisk in eggs, salt, and pepper. Pour mixture into the ramekins. Fill the baking pan with 1/2 inch of hot tap water and bake the flans until set but still jiggly, 25-30 minutes.  Remove and set aside in the water to cool. Run a knife around the edge before turning out onto the plate.

STEAK WITH BLACKBERRY SAUCE

Lemon vinaigrette:

Juice of 3 lemons

1 T. champagne vinegar

olive oil

2 T. honey

1 T. dijon mustard

kosher salt and pepper

STEAK WITH BLACKBERRY SAUCE

In a medium bowl whisk together lemon juice, vinegar, honey and dijon until combined.  Slowly whisk in olive oil (amount to your own taste) until emulsified.  Season with salt and pepper. Enjoy this delicious steak with blackberry sauce along with the perfect combination a flan and arugula salad.

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
