STEAK AND BLUE CHEESE TACO???!!! WHAAAAAATTTT???

I’m not sure if you’re like me or not, but sometimes I crave certain foods, but want them differently.  For example, I want eggs, but I want an egg burrito.  Or like a couple weeks ago, I wanted a steak and blue cheese salad….but wrapped in burrito form lol!! There’s just something about wrapping up your favorite foods in a tortilla and having that great little package in your hand to chow down on, adding whatever little extras  you want to make it your own.  So…I fulfilled my craving and did just that.

I LOVE the combination of steak and blue cheese, and steak and caramelized onions, and…..well you get the point.  So I made all the things I like to have with steak and made my own little taco bar out of it!  I used rib-eye steak, and seasoned it with some warm spices before searing it, slicing it and serving it up with my sides.  So here’s what I ended up with!!!!

Rib-Eye Seasoning:

For 2 steaks

1 1/2 tsp. ground cumin

1 1/2 tsp. ground coriander

1 1/2 tsp. chili powder

1 tsp. garlic powder

1 tsp. onion powder

salt and pepper

Season steaks liberally.  Cook steaks over medium-high heat, turning once, to desired doneness.  Set aside.

Caramelized Onions:

2 tablespoons unsalted butter

2 medium yellow onions, halved and sliced paper thin (about 4 cups)

Kosher salt

Freshly ground black pepper

Melt the butter in a large frying pan over medium-low heat until foaming.

Add the onions, and let them cook, stirring rarely, until they are deep golden brown and caramelized, about 45 minutes. Season well with salt and pepper, remove from the pan, and let cool.

Here’s the other good stuff I decided to add to my taco….be creative and make it fun to eat!!! It can be anything you want it to be!

Taco Ingredients:

Bacon

Blue Cheese Dressing

Tomato

Avocado

Hot Sauce

Lettuce

Lime Wedges

I even pulled out my “tortilla” holders that I got in Mexico to hold the warm tortillas in until Ludmilla got home..she loved it!!!!

Of course don’t forget that ice cold cerveza to wash it down with!!!!!!!

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
