SPRING STEAK SALAD

It’s so nice when we make flavorful veggies at home that we can’t stop eating!! Marilyn made sautéed mushrooms, blanched asparagus, added diced tomatoes and mixed with a basil vinaigrette. It felt like Spring with how light and fresh tasting the sauce was!! One of the best sauces I’ve ever had, and it was super delicious on top of the steak!! Happy first day of Spring and have a great weekend!!

SPRING STEAK SALAD

Salad Ingredients

asparagus, cut into 1 inch pieces, blanched and cooled

sautéed mushrooms (recipe below)

roma tomatoes, seeded and diced

basil vinaigrette (recipe below)

For my salad I used asparagus, mushrooms and tomatoes, but you could use any veggies you want to top off your steak…..

SPRING STEAK SALAD

MUSHROOMS

1 lb. crimini mushrooms, sliced
2 T. minced shallots
1 T. minced garlic
1 T. chopped, fresh thyme
1/4 c. white wine
1 T. soy sauce
2 T. olive oil
kosher salt and pepper

DIRECTIONS

Heat a large sauté’ pan with olive oil ver medium high heat. Add sliced mushrooms and saute until most of the liquid has evaporated and mushrooms are cooked.  Add shallots, garlic and thyme and sauté another 2 minutes until soft. Add white wine and reduce. After 1 minute add soy sauce and reduce another minute. Taste for seasoning and add salt and pepper to taste. Set aside.

BASIL VINAIGRETTE DRESSING

Ingredients:

2 garlic cloves, minced

1 c. packed basil leaves, coarsely chopped

1 1/4 c. extra virgin olive oil

3 T. champagne vinegar

pinch of crushed red pepper

kosher salt and pepper

In a food processor, add minced garlic and basil and pulse until finely chopped.  Add vinegar, red pepper flakes and  combine.  While food processor is running, slowly drizzle in olive oil until emulsified.  Season with salt and pepper.

Combine all salad ingredients and mix with desired amount of basil vinaigrette.  Place on top of your grilled steak and drizzle extra dressing on top and around….yummmmmm!!

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
