So, we’ve mentioned here before both Ludmilla and my breakfast preferences…she’s a huge egg white omelet eater and I love my yogurt and fruit. I know that we both get tired of the same old thing to eat…who wouldn’t??!!! This was happening again for me this week. With spring here and nicer weather just around the corner I’m ready to switch things up. I love any king of “pudding”. I guess it’s the texture and creamy mouth feel that just feels comforting and filling for me. So I used coconut milk (dairy free, sugar free) combined with chia seeds (antioxidants, protein, omega 3…the list goes on) and some sweet flavors to create my own breakfast pudding. I am loving it! It’s so easy and versatile….add any kind of fruit, nuts, sweets…..make it your own… and it’s super healthy to boot! let’s switch it up for Spring!!!!!
1 1/2 c. unsweetened coconut milk
1 tsp. vanilla
1 tsp. cinnamon
1/4 c. passionfruit juice
4 T. honey (or sweetened to your own liking)
6 T. chia seeds
2 T. flax seeds
sliced, toasted almonds
In a small bowl combine coconut milk, vanilla, cinnamon, passionfruit juice, honey, chia seeds and flax seeds until well combined and mixed well. Let sit overnight for chia seeds to absorb the liquid and become thickened. Serve with your favorite sides!!!
I used blueberries and almonds…YUM!!!
