Hey you! Did you survive after all the holiday parties? I don’t know about you but I felt that anytime I could have a sweet “overdose” and die… lol ! We had our Brazilian Christmas Eve and it was amazing! It was amazing because we had the best guests ever to share with us my Brazilian feast for over 5 hours with plenty of food, drink, laughing, talking and the most important thing… it was surround with love and gratitude. On Christmas day we went to my favorite Americans…Uncle Gary and Auntie Joyce, to eat the traditional American Christmas dinner … Marilyn’s family is Danish so always there are boxes of cookies with all kinds you can imagine. After all those parties, I seriously, I can’t see Christmas food or cookies for awhile…
So, here is a very refreshing and light salad that will help you not miss all the fat and sweet food you had from Christmas. It’s great because it still uses “Christmas” ingredients and is super festive. It would even be great for a New Years Eve dinner party! I’ve adapted this from Food.com…I made my own changes and it was so delicious we had seconds!!! lol I hope you like it!!
Spinach and Arugula Salad with Pomegranate and Persimmon
1/3 cup pomegranate juice
3 tablespoons walnut oil or 2 tablespoons extra virgin olive oil
2 teaspoons balsamic vinegar
1 garlic clove, finely minced
1 T. dijon mustard
1/2 tablespoon brown sugar, packed
1 t. salt
1 t. pepper
8 ounces soft fresh goat cheese
Fresh ground pepper
1 cup toasted pistachios, finely chopped
10 cups spinach plus 2 cups arugula
2 -4 fuyu persimmons, peeled, cored and cut into wedges
1 cup pomegranate seeds (fresh or prepared)
1/4 c. fresh basil, chiffonade
Salt and pepper to taste
Whisk together dressing ingredients. Preheat oven to 375 degrees F. Form goat cheese into 1/2 oz. balls, top with freshly ground pepper, and roll in pistachios to coat. Place on a baking sheet.
Mix greens with basil, salt and pepper and set aside. Just before serving, warm the goat cheese in the oven for about 3 minutes. Toss greens with dressing to taste.. Plate with persimmons, pomegranates and warm goat cheese. Here is the video on Instagram. Enjoy!
