I never was a nuts, crackers or cheese snacker in my life. But things have been changing since I started following some fitness girls on Instagram lol… And I’m not ashamed of it and I tell you why! I love to see that they have built and keep building their “perfect bodies” with a lot of work and discipline and share their results and knowledge with “us” thru photos and videos. I’ve been learning a lot about exercise, food and metabolism and I am slowly becoming a happy nuts, fruit and edamame snacker. We eat edamame quite often here in our house and one day while we were toasting some nuts we decided to do the same thing with the edamame that we did with the spicy garbanzo beans (here). It turned out pretty tasty. I hope you enjoy it!
- 1 package frozen shelled edamame
- 1 tbsp olive oil
- 1 cup grated parmesan cheese
- ¼ tsp garlic powder
- cayenne pepper to taste
- salt and pepper to taste
Preheat oven to 400 degrees F. Combine ingredients in a large bowl and mix well, so edamame is fully coated with all the ingredients.
Spread edamame on a large baking sheet, toss occasionally, and cook for 35-40 minutes until cheese starts to lightly brown. Serve immediately or let cool down and serve at room temperature. We noticed that the edamame gets crispier without the foil on the pan. Just a tip!
