Sweet and savory bacon. What’s not to love about that? While we were making spicy candied pecans I thought about doing the same with bacon. I love the combination of sweet, spice and salt. You need to use good quality bacon for this – thick and with only natural smoked flavor – think quality over quantity for this recipe. This spicy candied bacon could be served as an appetizer, added to salads, maple donuts, pancakes, cookies, drinks… It is unending the options for this temptation!! I think it’s a great idea for Valentine’s day!!
- 12 slices quality bacon (not extra thick)
- 3 tbsp. pure maple syrup grade B (not pancake syrup)
- 1 c. brown sugar
- 2 tsp. Dijon mustard
- ½ tsp. Kosher salt
- ¼ tsp cayenne pepper (optional, if you don’t like spice)
Preheat the oven to 350 degrees F. Line a rimmed baking sheet with foil and set a rack on top. Spray the rack with nonstick spray.
Mix all the ingredients in a bowl. Dip bacon slices in the mixed ingredients, coating both sides, and place the coated bacon strips on the rack.
Bake 15 to 20 minutes, or until the bacon appears to be caramelized and somewhat crispy. Using a pair of tongs, turn each slice and continue to bake until a dark brown and cooked through.
Bacon will not crisp while is baking in the oven. Bacon will get crispy after it cools and the sugar has hardened.
