SOUTHWEST TACOS

I love to watch TED Talk and last week I watched Monica Lewinsky talking about “the price of  shame” that she calls the “online culture of humiliation”, the “empathy crisis” that our society has been experiencing since everyone has been using the internet. Her speech was so sincere, touching and emotional! I can’t imagine how hard it was for her at age 22 to be in the spotlight in front the world and be judged by people who had no idea who she was.  We all know the bitter taste of shame. Most of us know it privately, but when it’s a public shame exposed to all the media without having the chance to defense yourself, it must to be so hard!! Cyber bullying its a such an important subject that truly needs to be handled quickly. What I can say is that Monica is an impressive speaker! Wow!! What a comeback!!  I learned so much watching this video!! If I was already careful about making any comments online, now I’m even more so.  (Actually. I’ve never left a comment online that would hurt someone). Cheers to love, compassion and to Monica Lewinsky!!!

Lets talk about our recipe!! We bought a huge piece of flank steak! Marilyn made half in the Asian style and she used the other half to make the Southwest style. We made tacos out of it and it was delicious!! It’s very flavorful this southwest tacos!! Happy 4th of July!! Please, no fireworks!!! It has been dry everywhere and the dogs will appreciate it!!

SOUTHWEST TACOS

Ingredients

Flank Steak Marinade

1 whole beef flank steak

1 c. olive oil

6 T. Worcestershire sauce

2/3 c. lime juice

6 garlic cloves, minced

2 T. ground cumin

2 T. ground chili powder

2 T. smoked paprika

2 T. ground coriander

1 tsp. red pepper flakes

2 tsp. kosher salt

1 tsp. black pepper

2 T. brown sugar

Directions


Whisk together all of the marinade ingredients until combined. Put flank steak in a ziplock bag and pour marinade over. Refrigerate overnight.
When ready to cook flank steak, pull out of refrigerator 30 minutes prior to grilling. Pull steak out of marinade and save the marinade! This will be your salad dressing!
Put dressing into a saucepan and bring to a boil. Reduce heat and cook for 4 minutes on low heat. Cool.
Preheat your grill to indirect heat. (see previous posts on how to do this).
Sear steak on each side for 3 minutes. Place away from heat and cook indirectly until temperature reaches 130F. (This will be rare. If you would like it more done, cook it longer, but remember, flank steak gets tougher the more you cook it.) Let it rest for 15 minutes and slice thinly across the grain.

Southwest Salad

Ingredients

Cooked black beans

Chopped cucumber

Diced avocado

Fresh sweet corn

Green and red tomatoes

SOUTHWEST TACOS

Directions

Mix all salad ingredients with the cooked/cooled sauce from the marinade. Meanwhile, warm tortillas in a dry skillet over medium heat or directly over a gas burner, about 30 seconds on each side. At the table, fill tortillas with the steak and the southwest mixture and sour cream if desired.

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
