BRAZILIAN FLAIR CHICKEN WITH PEACH SAUCE

Brazilian flair chicken with peach sauce is a mix of sweet, smoky and refreshing!! The fresh peaches and the basil gives this dish the final delicious summer touch!!

BRAZILIAN FLAIR CHICKEN WITH PEACH SAUCE

We just started peach season here in Washington!! They are at their finest right now and we had a whole flat to use.  Ludmilla loves sweet with savory together and I thought of making something simple with our overripe peaches in the fridge. The flavors of this dish are sweet, smoky, a little spicy and just downright delicious!  You could use any cut of chicken, but I really love the taste and moistness of chicken thighs.  We love crunchy chicken skin, so I browned it and made extra crispy. Yummy!! With the same pan I added the peach sauce on the bottom, added the chicken thighs, added more sauce on top and took it to the oven to finish cooking. We added the sauce on top of the chicken skin for the video and photos, but if you want to keep the crispness of the skin add the sauce at the last minute before serving this dish. To finish of this dish we added fresh peaches and sprinkled basil. It was so refreshing!!

BRAZILIA FLAIR CHICKEN WITH PEACH SAUCE
 
Ingredients
  • 8 peaches, plus one for garnish, peeled and cut into chunks
  • 2 T. ginger powder
  • 2 T. cumin
  • 2 tsp. ground coriander
  • 2 each peppers in adobo sauce
  • 3 T. chopped garlic
  • 6 T. brown sugar
  • 4 T. rice wine vinegar
  • Juice of 4 limes
  • 10 ea. chicken thighs
  • kosher salt and pepper
  • olive oil
  • fresh basil
Instructions
  1. For the peach glaze
  2. Place 8 of the chopped peaches, ginger, cumin, coriander, peppers in adobo sauce, garlic, brown sugar, vinegar and lime juice in a food processor and blend until smooth.
  3. Place mixture in a saucepan and cook over medium heat until thickened and reduced, approximately 20 minutes, stirring frequently so as not to let it burn.  
  4. Season with salt and pepper and set aside.
  5. For the chicken
  6. Preheat oven to 400F.  Season chicken thighs with salt and pepper.
  7.  Heat an ovenproof skillet over medium high heat and place 2 T. olive oil in the pan.  
  8. When oil starts to smoke place chicken thighs skin down.
  9. Sear until skin is golden brown and flip over to cook on other side for 1-2 minutes.
  10. Remove thighs to a baking sheet while you drain the oil from the pan.
  11. Place some of the peach sauce over the bottom of the pan
  12. Put thighs back into the pan skin side up.
  13. Brush each thigh liberally with the peach glaze and place in oven to cook, approximately 10-15 minutes depending upon the size of the thighs..make sure they reach 165F.  
  14. Continue to glaze every 5 minutes while they are cooking.
  15. Garnish with the remaining chopped peaches and chiffonade of basil.

    This looks amazing! I have tried other fruits with my chicken, like strawberries, but never peaches! They are my favorite fruit so I imagine that this will be delicious!

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
