Finally, We are back to reality! That means back to blogging too!! We took a necessary break and now it’s time to “get it together”. I believe that not only us but most of the women in the world are on a diet after the holidays, right?! We ate sooo much and the best part of it is that we ate without any guilt. Now it’s time to lose those extra pounds that we gained over the holidays. Marilyn made a smoked trout salad with frisee’, potatoes, celery, apples and horseradish dressing for Thanksgiving that was AMAZING!! I never had this salad before. Actually, I never had smoked trout or horseradish salad dressing, so it was very nice to try something completely different. Here is a different and flavorful salad that I guarantee you will fall in love with and you will keep it in your favorite recipes file. And, once again, we want to wish you the BEST in 2015.
1/4-1/2 lb. smoked trout, broken into large pieces
5-6 heads frisee’, trimmed, washed and spun dry
6 ribs celery, cleaned and small diced
12 oz. fingerling potatoes, cooked, cooled and cut into rings
2 honey crisp apples (or apples of your choice), sliced
Horseradish Dressing Recipe
3/4 c. sour cream
1/2 c. mayonnaise
1/2 c. horseradish
2 T. minced shallots
3/4 tsp. minced garlic
3/4 tsp. celery salt
3 T. lemon juice
2 tsp. sugar
kosher salt and pepper
For Horseradish Dressing: Combine all ingredients and whisk until smooth. Set aside.
Combine frisee’, potatoes, celery, apples and horseradish dressing to taste. Top salad with pieces of smoked trout and garnish with chopped chives.
