SHRIMP CAKE BURGER

We love hamburgers!!!! Especially during the spring and summer months when it’s heating up and we want to be outside with the grill.  I told Ludmilla that I really wanted to make a different burger.  I think we accomplished just that.  Craving a “fish” burger, I decided to go with shrimp!!  We loved it!! The combination of spices went so well with the avocado and mango….then the chipotle mayo!!!! It’s spicy, creamy and fruity all at the same time. It’s a bite of summer when you have the heat of the shrimp with chipotle mayo mixed with the fatty avocado and the sweetness and juicyness of the mango. Welcome Summer!!

SHRIMP CAKE BURGER

Ingredients

1 lb. large shrimp, peeled, deveined and divided

1/2 c. yellow onion, chopped

1/2 tsp. cayenne pepper

2 tsp. cumin

1 tsp. garlic powder

1 tsp. coriander

1 tsp. smoked paprika

2 large egg whites

kosher salt and pepper

1/4-1/2 c. bread crumbs

1 avocado

1  mango

bib lettuce

1 medium yellow onion, sliced and sautéed

chipotle mayonnaise or your favorite condiment

brioche burger buns

SHRIMP CAKE BURGER

Directions

In a food processor, place half of the shrimp and the chopped onion and pulse until finely minced.  Chop remaining shrimp into thirds.  In a large bowl mix the chopped shrimp, the pulsed shrimp mixture, cayenne, cumin, garlic powder, coriander, smoked paprika, salt and pepper and egg whites. Add 1/4 c. breadcrumbs and combine until mixture feels sticky and holds together.  If needed, add more breadcrumbs.  Form into patties.

SHRIMP CAKE BURGER

Grill or sear until cooked through.  Serve with chipotle mayonnaise, avocado slices,  mango slices lettuce and sautéed onions.

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
