ROASTED SPICY CHIA SEEDS GARBANZO BEANS

The Superbowl is coming up and for us in Seattle this year it’s more than special because our Seahawks are playing for the title! We are the 12th man and the loudest in the country!! We are so excited for Sunday to arrive and to celebrate our place in the Superbowl!  I don’t know about you but we are already thinking about the food and drinks for the big day. We are still on our “carb-free” month, and we are going to make for a snack these spicy roasted chia seed garbanzo beans and also make a sweet version of them. These baked garbanzo beans are crunchy plus are very healthy: high in protein and fiber. If you don’t have chia seeds you can omit them, the same with the  coconut oil for the sweet version. One tip: roast the garbanzos until crispy (about 1hr) before coating them in the oil mixture. I tried it this way and I also tried mixing them first with the oil and roasting after… For the crispiness, they are better the first way. We have a video on Instagram.

Enjoy this  great snack as an alternative if you’re craving chips/popcorn but want something healthier. They’re great on their own, but also yummy on top of a salad. These roasted garbanzo beans are my new addiction!!

Ingredients

3 cups garbanzo beans

3 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon cayenne pepper

1/2 teaspoon sea salt

1 teaspoon chia seeds

Directions

Rinse and drain the chickpeas. Put chickpeas onto paper towels to pat dry. Combine all ingredients in a bowl and toss to coat evenly. Preheat oven to 450 degrees F. Put them on  a baking sheet and spread out in a single layer. Every other minute stir the garbanzo beans to roast evenly. Let roast until nicely browned and very crispy, about 45 minutes to 1hr (it depends on your oven and how crispy you want them. I like them very crispy!!). If you like them more spicy, you can add more cayenne pepper too.

COCONUT-CINAMON GARBANZO BEANS

2 cups garbanzo beans

2 tablespoon coconut oil (or olive oil)

2 tablespoon brown sugar

1 tablespoon cinnamon

The directions are the same as the for the spicy ones. The sweet version I made manyyyy times because I was expecting them to be very coated like candied nuts or caramel corn… This is not the case!! For those don’t have a sweet tooth it’s a perfect snack because you can taste the sweet and the coconut flavor in your mouth. In my case because I am addicted to sweets… It didn’t satisfy me!! Marilyn loved it as did my dear Kathy too.

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
