FALL IS ALMOST HERE!! Yayyyy
I find it a lot more challenging to eat salads in the fall/winter months then I do in the summer months.
I think because simply the fall/winter months tend to request comfort and richer foods and salad doesn’t usually fit this category, right?!. But when you use raw kale leaves as the base of your salad, suddenly you’ve got a rich, crisp and very flavorful ingredient to pair with seasonal veggies and create a delicious fall/winter dish.
This refreshing raw kale salad is nutritionally amped up with chanterelle mushrooms, quinoa and parmesan. This green leaf is still among the healthiest plants on the planet. It’s a great immune booster to keep us healthy during the colder weather!
I couldn’t stop eating this salad, especially the nutty flavor that the chanterelle mushrooms give to the salad.
And you’ve got to love that – it tastes great AND it’s great for you! Another win-win.
Kale Salad with Quinoa and Chanterelles:
1 lb. kale, stemmed and cleaned, torn into bite size pieces
2 c. quinoa
1 tsp dijon mustard
1 tsp honey
1/4 c. fresh lemon juice
1/2-3/4 c. olive oil
Salt and pepper
Whisk together dijon, honey, lemon juice, salt and pepper to combine. Slowly drizzle in olive oil whisking until emulsified.Taste and adjust for personal seasoning and acidity.
1 lb. Chanterelles
1/4 c. Olive oil
1 T. Soy sauce
1 T. chopped shallots
1 tsp. chopped garlic
1 T. chopped thyme
1/2 c. white wine
Salt and pepper
Wipe off any excess dirt and needles that may be on the mushrooms..do not wash as this makes the mushrooms waterlogged. Tear any large chanterelles in half if desired.
Heat olive oil in a shallow sauté pan. When hot, add mushrooms. Sauté until water from the mushrooms has almost evaporated. Add shallots, garlic and thyme and sauté for 1 minute. Deglaze with white wine. Reduce and add soy sauce. Season with salt and pepper to taste.
Quinoa: instructions here!
Mix kale with lemon vinaigrette (amount to taste) Let sit for 10 minutes for kale to “wilt”.
Add whatever amount of quinoa you would like and mix. Place chanterelles on top of salad and top with shaved parmesan. EAT!!!
