Every spring we make this raw asparagus salad . We make it so much that at the end of spring we can’t eat it anymore. It’s a perfect salad for hot days!! It’s made with shaved raw asparagus with parmesan cheese, pistachios and homemade lemon vinaigrette. It’s fast, easy and a perfect side to go with any kind of meat, fish or chicken dish… or you can just have the salad as a main course. This salad is the kind of wholly satisfying dish that makes you wonder if you might possibly be a very happy vegetarian. Don’t push… lol I love my meat!!!
1 bunch asparagus, woody ends trimmed off.
Zest of 1 lemon
2 t. lemon juice
2 t. champagne vinegar
2 T. minced shallots
1 t. honey
1 t. dijon mustard
kosher salt and pepper
2 T. pistachios, shelled, toasted and salted
1/2 c. shaved parmesan
1 T. whole parsley leaves
Combine lemon juice, lemon zest, vinegar, shallot, dijon, honey and salt and pepper to taste in a small bowl. Slowly drizzle in olive oil to make a vinagarette to taste. Mix to combine.
Let sit while you shave the asparagus.
Thinly slice the asparagus using a vegetable peeler, into large strips and place into a medium bowl.
Mix vinaigrette with shaved asparagus and toss to coat. Top with pistachios and shaved parmesan.
