In our house we eat A LOT of quinoa..we love it! We’re always trying to find new ways to use it in recipes and create interesting meals. I had a great idea (genius girl!! lol) of making these quinoa cakes, and filling them with a delicious cheese mixture and pumpkin. Let me tell you, these are delicious!! They are so easy to make, super healthy and so filling! We served these quinoa pumpkin cakes with a simple arugula salad drizzled with truffle oil. Truffle oil drizzled over any kind of greens has been my new obsession lately. Unfortunately, Marilyn hates truffle oil, although she loves the real tru$$le. So every time when I use it for my salads we have to make some kind of quick dressing for her. It’s kinda pain in the… but let’s make this relationship work, right?! Just in case if the filling that we used you don’t care for, you could fill these with anything you like! Mushrooms, veggies, fruit…it’s really up to you !
For the quinoa cakes
2 c. chicken or vegetable stock
1 c. tri-colored quinoa
1 1/2 c. pumpkin puree
5 T. chia seeds
2 T. flax seeds
1 T. dried oregano
5 T. goat cheese
2 T. mascarpone cheese
Preheat oven to 350F.
In a medium saucepan bring chicken/veg stock to a boil and add quinoa and 1 T. kosher salt. Reduce to a simmer and cover. Cook until liquid is evaporated and quinoa is cooked. 15-20 minutes. Remove to a mixing bowl and add the pumpkin, salt, chia seed, flax seeds and oregano. Mix well and set aside for at least 15-20 minutes to thicken.
In a small mixing bowl combine goat and mascarpone cheeses. Set aside.
After quinoa mixture has thickened, take 1-2 T.of the quinoa mixture (depending on how big you want your cakes to be) and form into a patty.
Then place 1 T. cheese mixture in the middle. Top with more quinoa mixture to cover and form into a patty, making sure the cheese mixture is not coming out the sides. If so, place more quinoa over and around the patty.
Continue with the rest of the quinoa pumpkin mixture and cheese until you have 4-6 patties, depending on the size.
Chill at least 30 minutes to set.
Place patties on a greased baking sheet and cook for 15-20 minutes, flipping over halfway through to create a crust. Remove from oven and plac avocado slices on top.
