PRAWNS WITH POLENTA AND GREEN BEANS

I love shrimp with grits, so I decided to make a Northwest style recipe of this dish…prawns with polenta.  It was so satisfying and comforting on a cold rainy night that we ate it all!!  Use whatever seasoning you love on the prawns…make it your own and you won’t be sorry! We served ours with creamy polenta and a side of green beans.

Ingredients

16 large uncooked prawns

2 T. Old Bay Seasoning

1 tsp. chili powder

1 tsp. cumin

salt and pepper

2 red peppers, diced

1 onion, diced

8 oz. crimini mushrooms, sliced

2 T. minced garlic

1 – 14.5 oz can diced tomatoes

olive oil

1 c. white wine

2-3 T. unsalted butter

Directions

Marinate prawns with Old Bay, chili powder, cumin and salt and pepper for 15 minutes.  Heat 2 T. olive oil over medium heat in a large sauté pan.  Cook prawns 2 minutes, deglaze with 1 cup white wine and cook until just done.  Remove prawns with any liquid and set aside.  On medium high heat add 2 T. olive oil and saute’ diced peppers, onions, garlic  and mushrooms  until crisp tender. Add canned tomatoes and butter and reduce 3-4 minutes.  Add prawns with reserved liquid and warm through. Serve on creamy polenta with shaved Parmesan.

Creamy Polenta

1 cup polenta

2 1/2 c. whole milk or half and half

2 1/2 c. water

1 tsp. minced garlic

salt and pepper

1/2 c. grated Parmesan cheese

2 T. butter

Directions

Heat milk, water, garlic and salt and pepper over medium heat until just simmering.  Slowly add polenta whisking constantly until mixed well.  Turn heat to low and cook, whisking, until polenta is creamy and just cooked through, approximately 20-25 min.  You want it to be loose and creamy.  Add butter and Parmesan cheese.  Taste for seasoning and add salt and pepper to taste.

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
