PORK AND EGG BISCUIT SANDWICH

Ludmilla and I have been doing very well about eating healthy and as you know, not drinking alcohol.   I’m not saying it’s been an easy Lent so far because we love to enjoy everything that’s “bad” for us lol!!  But during our weekends this Lent, (which is during the week for us), we have been splurging.  For us that means some kind of sweet treat and an indulgence for breakfast.  Today I got up and decided to make some fresh biscuits and make breakfast sandwiches.  We had some leftover pulled pork from our healthy leftovers that I wanted to use and with some seriously creamy eggs, melted sharp cheddar and siracha aioli….omg….we were super satisfied.  With a steaming hot cup of coffee this was a great way to start our day!!

PORK AND EGG BISCUIT SANDWICH

Ingredients

pulled pork or any kind of protein that you love

scrambled eggs

sliced, sharp cheddar cheese

siracha aioli

PORK AND EGG BISCUIT SANDWICH

Directions

Split biscuits in half and heat in a 300F oven for 3-4 minutes, add slices of cheese and warm another 2 minutes or until cheese is melted.  Spread siracha mayonnaise over the top and bottom halves.  Top with pulled pork and scrambled eggs.  Dive in!!!

Siracha Aioli

2 egg yolks

3 tsp. lemon juice

1 tsp. dijon mustard

siracha

1/2 extra virgin olive oil

6 T. vegetable oil

salt and pepper

siracha

Whisk together egg yolks, lemon juice, dijon and siracha (amount to your liking) in a bowl until combined.  Combine oils and slowly drizzle into the egg mixture until emulsified and thickened.  Season with salt and pepper.  If the mixture is too thick, dilute with water.

The Best Scrambled Eggs

6 eggs

3 T. butter, cut into pieces

salt and pepper

In a medium saucepan combine eggs and butter over medium heat.  Using a spatula, break up eggs and mix eggs and butter vigorously and continuously until eggs begin to form small, creamy curds.  Move pan on and off the heat if they begin to cook too quickly.  Season with salt and pepper and serve on the biscuit.

    Not just for breakfast,…those would hit the spot any time of the day or night! Everything that tastes good, and makes you feel good is right there! Your biscuits were SO Good, and looked beautiful. But, what is “siracha”? I need to look that up!

    • Kathy! We were so glad you liked them!!! Siracha is a spicy asian sauce that’s delicious on everything!!! You should get some…Al would love it!!

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
