Pavé is very popular in Brazil and is generally made with sweet crackers and fruits. This recipe combines pineapple and coconut which is very common in Brazilian sweets. It is easy, refreshing and delicious! I made it using the pineapple as my bowl, but you can use a regular bowl. To make this dessert there’s no secret: it is a layer after layer process.
1 unit of diced pineapple
1 can condensed milk
1 cup (tea) milk
3 pieces of egg yolk
2 tablespoon (soup) of butter
1 can cream without liquid
1 package sweet crackers (your preference)
150 gr grated coconut toasted
3 piece (s) of egg white
4 tablespoon (s) (soup) of sugar
1 can (s) cream without liquid
You are going to start opening a pineapple, making a deep hole but be careful to not cut too deep or the dessert will come out.
Cut the pineapple in cubes and set aside.
Most of the Brazilian recipes make this pineapple with a sweet glaze. I don’t like that! I think it is way toooo sweet. I really like to eat and taste the fresh pineapple.
Make a “pudding”. And guess what ingredient you’re going to use: oh yes, condensed milk!.Place the condensed milk, milk, butter and egg yolk in a pan and heat until it gets thick like a pudding.
Beat egg whites with sugar until stiff peaks.
Add the cream, mix and set aside.
Easy peasy this preparation! It is layer after layer. Start with the crackers, after that add the pudding, pineapple and the last one is the glaze.
Spread the topping over and garnish with the grated coconut .
Leave the dessert to cool for 3 hours and serve chilled.
