MINI BURGER AND BEER TASTING

Summer in the USA of course means barbecue, burgers and beer!!  But sometimes it’s hard to decide what kind of burgers or beer you want to have….so we decided to have a tasting of several burgers and beers to enjoy the variety!   There is a never ending choice of  beers of course, and burger tastes as well!! I had a blast creating different styles and types of burgers to have…and believe me…your guests will appreciate the fact that you have more than just beef at your  barbecue!!!

I also made different sides of “fries” to have with each burger….yes, there are more than just “french fries” to serve with your burgers, along with different salts for either your burger or your fries…..I  think you will LOVE the options here for your burgers and fries!!  Oh, and the beer isn’t bad either 😉

I decided to have a variety of meat, vegetarian, poultry and seafood burgers.

We also chose a couple of different types of mini-burger buns and several different beers for a variety.  Have fun with whatever you decide!  It isn’t rocket science!! There is no “perfect” combination of flavors….what is perfect is choosing what YOU like and enjoying your choice.

You could just as well have wine or cocktails with your burgers, we chose beer because the weather here in Seattle has been HOT! and it was super refreshing with the burgers. We also bought some cute napkins, “beer stein” shot glasses 2oz, trays and glasses for a great presentation of the tasting.  It was so much fun.

Be creative and use your imagination!!

Lamb Burger:

For this recipe we made lamb burgers and wrapped them in prosciutto before grilling…DELICIOUS!!! This was probably one of our favorites!!

3 tbsp. minced yellow onion
1 lb. ground lamb
2 tsp. dijon mustard

1 tsp. each finely chopped parsley, mint, and dill

1 tsp. dried Greek oregano
1⁄2 tsp. ground coriander
1⁄2 tsp. ground cumin
3 cloves garlic, finely chopped
1 scallion, chopped

Prosicutto slices
Kosher salt and freshly ground black pepper,
to taste

Heat 2 tbsp. oil in an 8″ skillet over high heat. Add onions; cook until browned, about 6 minutes. Transfer onions to a plate; let cool. In a bowl, mix onions, lamb, mustard, herbs, spices, garlic, scallions, and salt and pepper. Form meat into “mini” patties.  Wrap patties with prosciutto and grill to desired doneness.

Topping:

I made a spread of greek yogurt, diced cucumber and dill for the burger…then topped it with feta cheese, tomato and a basil leaf!

Salmon Burger:

A great alternative for those who love seafood!!

1/2 cup red bell pepper, diced
1/2 cup yellow bell pepper, diced

1/2 cup yellow onion, diced
1 1/4 cups panko
2 cloves garlic, minced
2 pounds salmon fillets, skinned and finely chopped
1 large egg, lightly beaten
1 tablespoon soy sauce
1 teaspoon fresh lemon juice
1/2 teaspoon salt

In a medium bowl, combine peppers, onion, panko, garlic, and salmon.

In a small bowl, combine egg, soy sauce, lemon juice, and salt; add to pepper mixture, tossing gently to combine. Form mixture into mini patties.  Grill to desired doneness.

Topping:

I made an “asian style” mayonnaise spread and topped the burger with tomato and lettuce!

1 cup mayonnaise
2 cloves garlic, minced
1 teaspoon soy sauce
1/2 teaspoon sesame oil

Mushroom Burger:

For those veggie lovers…..I fell in love with this burger!

4 portobello mushroom caps

1/4 c. balsamic vinegar

2 T. olive oil

1 tsp. chopped thyme

1 tsp. chopped rosemary

1 T. minced garlic

1 tsp. dijon mustard

salt and pepper to taste

4 sliced Provolone cheese

Place the mushroom caps, smooth side up, in a shallow dish. In a small bowl, whisk together vinegar, oil, thyme, rosemary, dijon, garlic, salt, and pepper. Pour over the mushrooms. Let stand at room temperature for 15 minutes or so, turning twice.

Grill to desired doneness topping with provolone at the end until melted.

Topping:

I used a cilantro pesto and garlic mint cheese that I bought at the grocery as spreads for the burger along with tomato and lettuce and a fried onion ring!!  OMG!!!!

American Burger:

This is the classic burger we all think of….I like to make mine “meatloaf” style with egg and breadcrumbs….it keeps the burger incredibly moist!!

1# ground beef

2 tsp. worcestershire sauce

2 tsp. minced garlic

1 egg.

1/4 c. bread crumbs

2 tsp. hot sauce

2 tsp. dried thyme

1 T. ketchup

salt and pepper to taste

8 slices bac0n, cooked semi-crispy or to your liking!

spicy jack and cheddar cheese

Mix all ingredients together and form into mini burger patties.  Grill to desired doneness finishing with cheese toward to the end to melt.

Topping:

Top with bacon strips, lettuce, tomato and toppings..ketchup, mustard, mayo, relish…..whatever you love!!

Sausage Burger:

An Italian take on the American burger…sausage with grilled peppers, mushrooms and onions !!! YUM!

2 tablespoons extra-virgin olive oil
1/2 pound cremini mushrooms, sliced
1 large onion, quartered lengthwise then sliced
2 peppers, (red, green)  thinly sliced
Salt and freshly ground black pepper
1 pound bulk hot Italian sausage
1 pound ground sirloin
1 tablespoon grill seasoning
2 large cloves garlic, grated
A handful flat-leaf parsley, finely chopped
8 deli slices provolone cheese

Heat 1 tablespoon olive oil in a medium skillet over medium-high heat. Saute mushrooms, onions and peppers until tender, 7 to 8 minutes then season with salt and pepper.

Combine the sausage and sirloin with grill seasoning, garlic and parsley. Mix and form into mini patties. Grill to desired doneness, topping with provolone at the last moment to melt.

Topping:

Top with sautéed mixture.

Buffalo Chicken Burger:

A great choice for those who eat poultry…a spicy and moist chicken burger!

1 1/2 lbs. ground chicken

1 T. minced garlic

1/4 c. diced onion

1/4 c. hot sauce

1/2 tsp. celery salt

1/4 tsp. poultry seasoning

1/2 teaspoon paprika

1 pinch cayenne pepper

salt and pepper to taste

Mix the ground chicken, onion, garlic, 1/4 cup hot sauce, celery salt, poultry seasoning, paprika, and cayenne pepper together in a mixing bowl until evenly blended. Form into mini patties. Grill to 165 degrees.

Topping:

Top with lettuce, tomato, blue cheese dressing and more hot sauce if you dare!!!

FRIES!!

We made 6 different types of fries to go with the six different types of burgers!  We store bought regular fries, sweet potato fries and onion rings.  I decided to make some alternative fried sides and they turned out great!

Mandioca fries:

Mandioca is a staple in the Brazilian diet and they make great fries!

Peel, cut and boil manioca (yuca) until tender.  Pat dry and then fry until golden.  Add salt to taste.

Asparagus fries:

Cut asparagus into 2-3 inch lengths.  Prepare 3 separate bowls for breading….flour, egg and panko..each seasoned with salt and pepper.  Dredge pieces in flour first, then egg, then panko.  Fry until golden.

Kale Chips:

1 bunch curly kale

salt and pepper

Take kale off of stem.  Place on baking sheet and drizzle with olive oil, salt and pepper.  Bake in 350 degree oven for 10-15 minutes or until crispy. It was Ludmilla’s favorite!

This is where you can go crazy!!! We chose 6 different styles and types, but feel free to pick whatever you love and are curious about.

We chose a Hefeweizen, Lager, Pilsner, Stout, Blonde Ale and Red Ale.  We tasted each one with the different burgers and had a blast….there are no rules!!!!!

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
