Sunday Evening!!! When I was young my mom and dad always made a special Sunday evening dinner….pot roast, scallops, lobster, steak, oysters…anything that was a special dinner was made then because during the weekends they had more time to cook.  Both of my parents worked and dinners during the week were fast…boxed mac ‘n cheese, sloppy joes, hamburger helper…definitely fast food of the 70’s.  But Sundays were different. I love the memories I have of Sunday dinners, but it’s different for me now.  I always work on other people’s weekends and for me, Sundays aren’t the way they used to be.  Since I work on weekends, I usually cook my “Sunday Suppers” during the week, so for me Sundays are now days for “leftovers”. So here is a suggestion for leftovers from this week’s post.

Remember the Salmon Taco post????  The avocado/tomatillo sauce is so versatile…. I had so much left I decided to use it as a dressing to make a green salad…I just added tomatoes and peppers to a mixed greens and spinach mix.., things I already had on hand.  Use what you have!! It’s not only economical, you can be creative!!! .  I had pork tenderloin and decided to put a spice rub on it, (I used some of my favorites…dried oregano, cumin, coriander, salt, pepper, chili powder), sear it and slice it to serve on the salad.  Use chicken, beef, pork, seafood…..or make it vegetarian by adding garbanzo beans or tofu!

I’ve heard so many people say, “I don’t eat leftovers”, really??? Why not???  So many foods are sooooo much better the next day!!! Try using your dressings, meats, seafoods, pork, etc… after they’ve been marinated, cured, cooked and set….the next day.  You’d be surprised at how delicious they are….just add your own special “deliciousness” and see what you think!!

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
