LAMB WITH POMEGRANATE

I love the holidays, and all the ingredients that come with them.  Pomegranates are one of my favorite ingredients to use during this time of year so I went about trying to do something new and different with them.  So here is what I came up with.  Lamb is so satisfying and really does well with marinades so what a perfect combination!  I made the marinade in a mortar and pestle but you could also puree it in a food processor, just make sure it’s combined very well.  It’s a simple, delicious and great fall/holiday meal.  I made a side of steamed broccolini to pair with it and we loved it!  Happy Holidays!

Ingredients

8 lamb chops

5 large garlic cloves

1  1/2 c pomegranate seeds plus 1/2 c for garnish

1/2 cup diced onions

2 T. chopped fresh chopped rosemary

2 T. chopped fresh chopped thyme

3 T. molasses

2 T. olive oil

salt and pepper

Salt and pepper the lamb chops generously and set aside.  In a mortar and pestle combine garlic, pomegranate, onions, rosemary, thyme, molasses and olive oil and crush until combined and all ingredients are pulverized.  Put the marinade in a ziplock bag, add the lamb chops and mix well.  Let marinate 2-4 hours.

Preheat oven to 400F.  Take lamb out of marinade and place on a rack on a sheet pan.  Place in oven and cook until medium rare (or to your liking) approximately 10-14 minutes, turning once (depending on your oven’s heat).

Remove from oven and let rest 10 minutes before serving.  Garnish with more pomegranate seeds. We have a video on Instagram.

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
