Lu has been asking me for awhile to make these for her again. To be honest, I just wasn’t in the mood…until this weekend. I was seriously craving Chinese food, and this dish in particular….so.. for a surprise I made this dish for her. I will admit that it’s a very traditional, American Chinese restaurant dish, but how many of us crave this type of food after whatever night or day we’ve had??? Don’t lie… I admit it. SO…here is my recipe for Honey Walnut Prawns….change it up however you like, and don’t feel guilty enjoying this super fat filled, American Chinese, dish that you know you all crave and love!!!!
1 lb. large shrimp, peeled and deveined
1/2 c. walnuts
1/2 c. sugar
1/2 c. cornstarch
3 egg whites
3 T. mayonnaise
1 T. lemon juice
1 T. honey
1 T. sweetened, condensed milk
shredded red cabbage
bibb lettuce leaves
fried rice noodles
2-3 c. vegetable oil
Heat 1/2 c. water to a boil. Add sugar and stir until thickened and caramel colored. Add walnuts and combine. Place walnuts on a parchment lined baking sheet until cooled.
Whisk together egg whites and cornstarch until smooth. Add prawns and set aside.
Heat oil to medium high heat and fry rice noodles until they puff uff, immediately. Set aside on a paper towel to drain.
Keep the oil on medium high heat.
Fry prawns until golden brown and drain on a paper towel.
Combine mayonnaise, honey, lemon juice and condensed milk and set aside.
Toss with the the mayonnaise mixture and place on top of bibb, cabbage and rice noodles.
