HEIRLOOM TOMATO AND GRILLED BREAD SALAD

One of the many great reasons I love spring is the fact that on the sunny days we are beginning to have I immediately put the grill to use and gather together any spring ingredients that the farmers markets are offering and start cooking! In this case, I was super excited to see the very first (early) heirloom tomatoes from a local farmer.  I decided not to wait because I was craving this salad!  This could easily be a light dinner or an appetizer salad.  The flavors are fresh, filling and so light that I consider this one of my favorite salads to make.  Heirloom tomatoes really do make the difference so do not use your regular red tomatoes.  I also find that a great artisan bread such as an Italian Como adds something special to the salad.  I usually make this with shaved Parmesan cheese on top, but we had some amazing burrata leftover and we used that instead…..OMG!  Use any amount of arugula, tomato and bread that you prefer and feel free to use whatever cheese you love….it will turn out amazing!

Ingredients:

2 thick slices artisan bread such as Italian Como (or any bread and even gluten-free)

olive oil

kosher salt and pepper

3 heirloom tomatoes, cut into wedges

baby arugula

balsamic vinaigrette

shaved Parmesan, fresh mozzarella  or your own favorite cheese (we used burrata pieces)

Directions:

Preheat grill to medium (indoor or outdoor)

DRESSING:

3 tbs Balsamic vinegar

9 tbs organic olive oil

Salt and pepper

Dijon mustard

Honey

Directions

Whisk together the vinegar, honey, mustard and salt and pepper.  Slowly drizzle in the olive oil until emulsified.  Adjust to your own taste. Set aside.

Drizzle a little olive oil over the bread slices and season with salt and pepper. Place bread on grill and cook until crispy and golden on each side.  Set aside and cut into large chunks (2 in. pieces)

Combine in a large bowl heirloom tomatoes, arugula and grilled bread.  Toss with balsamic vinaigrette to your taste.  Plate the salad and place preferred cheese on top.  Enjoy! As usual we have a video on Instagram (here).

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
