HEALTHY LEFTOVERS

A friend of mine, Elizabeth, eats very healthy all the time. But what surprises me is that she eats for her lunch (Monday – Friday) the same thing over and over again. She eats grilled veggies and grilled chicken with the same seasoning  for five consecutive days every week. HOW COME???? Sometimes I think that if food is not a big deal for you or the only purpose of food is like a fuel for your body maybe you would be able to eat the same thing. I know by now that food for me is more than fuel, I really love it and appreciate every bite and all the feelings that I have when I am eating. And, I really admire Elizabeth for her discipline. I cannot even imagine myself eating the same food for more than 2 days… Since we have a blog and we have been posting food recipes at least three times a week we have been eating different foods on daily basis, more than an average family for sure. Here is one more example of giving a different flair on what we had in our fridge: beans, butternut squash and leftover pulled pork. This dish is all about your favorite seasonings.

We roasted the butternut squash and blended and seasoned, we also cooked the beans, blended them and sauté with garlic and added salt and pepper to our taste.  With the pulled pork we added tomatoes to make moist and added lots of Malagueta pepper oil to make it very spicy. Our intention was to have an explosion of flavors inside of the blenched kale wrapped the pulled pork.  The oranges are a Brazilian touch that we used to eat with feijoada (Brazilian beans stew).

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
