Remember the pork chops I posted yesterday? Here are the sides I made to go along with that delicious pork. A light coleslaw and a flavorful corn on the cob in the way you never had before. I guarantee that!! Let’s get started with the coleslaw!
Coleslaw is a super American side to any barbecue dish. I have my favorites, but if you’re looking for a low fat side….this is the one!!
The flavor is still amazing, but using yogurt as a main ingredient with less mayonnaise creates a great tangy salad. It was a hit for my friends and they didn’t even know the difference!!
6 C. shredded cabbage (red, green, combination)
1 carrot, shredded
1/4 C. minced onion
1/4 t. salt
1 t. cider vinegar
1 1/2 t. sugar
1/2 t. dijon mustard
2 T. parsley, chopped
7 oz. greek yogurt
3 T. mayonnaise
salt and pepper to taste.
Mix cabbage and carrots to combine.
Mix dressing ingredients until smooth.
Combine together until mixed. Adjust seasonings to taste.
