GUAVA FILLED CAKE WITH CREAM CHEESE FROSTING

I said here before how much I love cakes, especially Brazilian cakes. Besides the flavor and the texture, most of them are made with very typical ingredients like this one with guava that you can’t find everywhere in. I made this cake for our neighbor’s birthday and of course I made a small fone or us. It’s easy to make and it’s delicious!! I know it’s not everywhere that you have Brazilian stores but usually you can find some Brazilian ingredients in Latin stores or on Amazon. If you have any questions, let us know! Enjoy!

Ingredients
4 eggs
1 cup and 6 tablespoons of sugar
6 tablespoons ( soup) of wheat flour
1 tbsp baking powder
17 oz of guava
3 1/2 tablespoons of brandy
1/4 cup  milk
2 packages of cream cheese (11oz)
1 can creme de leite without water (like this)

Preparation

Whisk the egg whites, add 6 tablespoons of sugar and the egg yolks one by one. Gently fold in flour and baking powder. Place in a form of 24 cm diameter, greased with butter and flour. Bake in the oven , preheated to 400 F for 30 minutes or until a toothpick inserted comes out clean . Let cool and unmold .

Filling
Melt the guava paste (here) with 3 tablespoons ( soup) of cognac adding water as needed until it becomes a thick sauce . Mix well and let cool.

Syrup
For the syrup , combine the milk and 1/2 tablespoon brandy and set aside.

Frosting
Mix well in a bowl the cream cheese, sour cream and 1 cup (tea) of sugar until fluffy. Refrigerate for 35 minutes before applying.

Layers
Cut the cake into two layers, moisten with the syrup, spread the filling to the edge and put layers together. Refrigerate for 3 hours. Frost the cake and decorate with small portions of guava .

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
