I love sweets and I am not ashamed to admit that!! Marilyn knows all about my addiction!! As you already know my weight has always been a struggle for me and I can’t just eat sweets everyday as much as my body screams for it… So, it was a nice surprise when I got home the other day after work and Marilyn had created this fruit dessert to help me out with my cravings. However, my first impression of it was: ok, it’s grilled fruit… it’s not going to be like a “real” dessert…My friend, after the first bite, I was totally overwhelmed! It was amazing! I love the combination of savory and sweet in my food and this dessert combines both plus a liquor!! I couldn’t ask for more right?!
Now I’m going to let Marilyn share one more delicious recipe with you!
Want an easy dessert for summer grilling? Fruit!!!! NO EXCUSES!! It’s the fastest, easiest and most tasty dessert you can make. Here’s a super fast and delicious way to use peaches this summer! GRILL THEM!!! Try to find ripe, but firm peaches for this desert…You will LOVE IT!!!
3 peaches, halved and pits removed
2 c. mascarpone cheese at room temperature
2 T. honey, or more to taste
1/2 c. Cassis, reduced by half
1/2 c. toasted pecans, chopped
Mint for garnish
That’s it!!! Seriously!!
Mix mascarpone and honey to taste, it should be a creamy, slightly sweet taste. Set aside.
Lightly oil halved peaches and set on medium hot grill.
Let them sit to grill until soft but not mushy.
Remove from the grill and fill with mascarpone mixture and plate with toasted pecans and drizzle with reduced Cassis. Garnish with fresh mint if desired.
A reminder folks… just because it’s homemade food don’t just grab whatever plate you have in your kitchen… Treat yourself as a guest!! You don’t need to use expensive plates to be creative! Use colorful plates to create a nice dish. Don’t forget that we eat also with our eyes! We always make our meals as if we are having a guest! It brings some romanticism and care to the table.
