SUMMER WITH GRILLED PEACH AND MUSHROOM SANDWICH

It’s very rare for us to make any sandwich recipe or even eat carbs in general. You must know by now that we are always watching what we eat. Since we’ve been concentrating our meals on veggies and lots of protein I (Ludmilla) am down almost three sizes in one year. YAAAYYY!! Another thing we are strict about is eating homemade food and avoiding any type of processed food. Homemade food is the only way to really know what I’m eating. Since last July, we have been making our own bread, crackers, hummus, salad dressings, cakes, etc, etc. However, sometimes we eat carbs or not homemade food when we are traveling or when we go out. Marilyn created this meatless (believe or not!) sandwich with a combination of flavors that I couldn’t believe how awesome it turned out. I bought some peaches (my favorite fruit) and I was super excited when she suggested making  a sandwich. My first reaction was what??? Peach (sweet) plus bread, avocado, mushroom … It was so GREAT that I asked her to make it again the next day. I couldn’t help myself!! We made this all outside on the grill, but you could easily do it in your oven as well.  Perfect Summer meal: grilled peach and mushroom sandwich.

INGREDIENTS

2 peaches, sliced into rounds

2 avocados

4 portobello mushrooms

Blue cheese (we used rossini blue, but use whatever type you love)

2 roma tomatoes, diced

1 lime, juiced

salt and pepper

basil

spinach

olive oil

Ciabatta bread

AVOCADO SPREAD

Mash the avocados with a fork until semi-chunky.  Add diced tomatoes, lime juice and salt and pepper to taste.  Set aside.

GRILLED PEACH AND MUSHROOM SANDWICH

DIRECTIONS

Preheat the grill to medium heat.  Grill the mushrooms 3-4 minutes each side or until tender (depending on the size).  During the last minute of grilling place slices of blue cheese on top and finish until melted. Set aside.  Lightly oil peach slices and place on the grill.  Grill quickly 1 minute each side (don’t grill too long or they will get mushy).  Set aside.  Slice ciabatta bread in half and oil lightly on each side.  Grill until just slightly crispy and golden.

ASSEMBLY

Spread avocado spread on the bottom of the ciabatta. Begin layering sandwich with mushroom, basil, grilled peaches, and spinach.  Start chowing down!!!

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
