GLUTEN FREE MEATBALLS WITH MARINARA

When It comes to meatballs, trust me I know the difference between a meatball that has pounds and pounds of bread crumbs to one that has just the right amount to keep the meat together. Marilyn made these meatballs with three different meats giving them a distinct flavor and also made this delicious marinara sauce with pancetta that I never had before. It was simply delicious and filling!! We had the meatballs by themselves for dinner and the next day we had them with homemade pasta. Even better… we used gluten free bread to make the meatballs!! Ingredients

For the meatballs:

Extra virgin olive oil

1 large onion, cut into small dice

6 cloves garlic, minced

6 malagueta peppers, minced (or 1 tsp. crushed red pepper flakes)

1/2 lb. ground beef

1/2 lb. ground veal

1/2 lb. ground pork

2 large eggs

1 1/4 c. grated Parmigiano Reggiano

1/4 c. chopped Italian parsley

1 c. gluten free bread crumbs

1/2 c. water

Kosher salt and pepper

Directions

Preheat oven to 350F.

In a large saute’ pan heat olive oil over medium heat.  Add onions and season with salt and pepper.  Cook until soft, 6-7 minutes.  Add garlic and peppers and cook another 3 minutes.  Set aside to cool.

GLUTEN FREE MEATBALLS WITH MARINARA

In a large bowl combine the meats, eggs, Parmigiano, parsley and bread crumbs.  Mix well.  Add onion mixture and season well with salt and pepper and mix again.    Add water and mix one last time.  Form into meatballs, the size of your choice.

Heat a large skillet over medium heat and coat with olive oil.  Add meatballs and brown on all sides.

Place on a sheet pan and cook 15-20 minutes until cooked all the way through.

Ingredients

For the marinara sauce

Extra virgin olive oil

6 oz. diced pancetta

2 red onions, small diced

2 T. dried oregano

6 garlic cloves, minced

Kosher salt and pepper

4 (28 oz.) cans plum tomatoes

water

GLUTEN FREE MEATBALLS WITH MARINARA

Directions

Heat a large sauce pot over medium heat and coat with olive oil.  Add pancetta and cook 4-5 minutes. Add onions and oregano and season with salt and pepper.  Cook for 6-7 minutes until soft.  Add garlic and cook for 2-3 minutes.  Pass tomatoes through a food mill directly into the pot.  Add 2-3 c. water and season the sauce generously with salt.  Cook for 2-3 hours until reduced, tasting along the way and adding salt to your liking.

Add meatballs to the sauce to reheat.  Serve marinara in a bowl topped with meatballs and plenty of grated Parmigiano on top!

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
