FAVA BEANS BRUSCHETTA WITH BURRATA

Remember when we made a dinner for our friends (here) a long time ago? The first course was fava beans bruschetta with burrata. We LOVE burrata! These irresistible toasts were served with the evening’s first glass of white wine. Bruschetta is the perfect starter for any gathering, but with a little creativity you can transform that “tradicional” bruschetta into something elegant, from finger food to a first course. It happened at our party!! Enjoy the fava beans while they are in season. They are an excellent vegetable source of protein and fiber. This may be a winning combination for weight loss too. At least it has been for us… this combination of foods with a high-protein and high-fiber.

FAVA BEANS BRUSCHETTA WITH BURRATA

Ingredients

  • 6 baguette slices (or any gluten free bread)
  • 2 lb. fava beans
  • 3 Tbs. extra-virgin olive oil, plus extra for drizzling
  • 1/2 c. chopped mint (or to your taste)
  • 2 tsp. sea salt
  • 1 tsp. freshly ground pepper
  • lemon juice to taste
  • 1 T. minced garlic
  • 2 balls buratta or fresh mozzarella
  • 1 T minced shallots

Directions

Preheat an oven to 400°F.

Arrange the baguette slices in a single layer on a baking sheet. Drizzle with olive oil and salt on both sides. Bake, turning once halfway through baking, until lightly golden, about 10 minutes. Remove from the oven and set aside.

FAVA BEANS BRUSCHETTA WITH BURRATA

Remove the fava beans from their pods and discard the pods. Bring a pot three-fourths full of salted water to a boil over high heat. Add the fava beans and cook until the beans are tender and the skins slip easily from the beans, 5-10 minutes. Drain the beans in a colander and, when cool enough to handle, slip off the skins and discard them.

In a food processor or blender, combine the beans, the 3 Tbs. olive oil, garlic, lemon juice,  salt, pepper and mint and process until a creamy puree forms. If the mixture seems too dry, add  more olive oil and/or lemon juice. Taste and adjust the seasoning. (The puree may be made up to 2 hours in advance, covered and refrigerated; bring to room temperature before spreading on the baguette slices.)

Spread the puree on the baguette slices and arrange buratta on top and just enjoy it.

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
