I’ve never really liked sweet potatoes growing up but I started eating them when last year I had mashed sweet potatoes with toasted pecans. OMG!! It was just perfect. It was an easy way to introduce to my daily food when Marilyn and I did the Whole30 a couple of months ago. I ate so much that I gained weight in the second week of the program… lol. Here we are again doing the Whole30 for a second time the. We were eating so much sugar, bread and pasta that the only way we knew that we would break the cycle was doing something drastic. It has been 6 days and so far it has been good.
One of the reasons I invited Marilyn to do the Whole30 again is to make us think about recipes that we would never make for the blog or even make for us. So the other day when Marilyn made some caramelized sweet potatoes to go with our eggs and veggies for breakfast, I went crazy about how much I loved them and about how we should do a post about these. Marilyn wasn’t sure about it, but when she made them, we realized that these are an amazing and satisfying snack that will stop that sweet craving and make you want to create more meals with this super root vegetable! The only difference with the sweet potatoes that we made for breakfast was that there was no toasted coconut on top. Btw, I think I will not lose any weight because of these sweet potatoes bites! Sad!

I LOVE Fall!! Fall is the only season when I refuse to leave this country and go somewhere else. I love pumpkin everything and the Halloween yard decorations. Of course, I love to see all the kids dress up but the yards and the food I’m obsessed with. Our neighborhood is kind of boring, including us… Thanks to Alli and Debi, our neighbors, they make the best Halloween yard decorations every year. - 4 ea. Sweet Potatoes, washed and cut into 1 in. Rings
- Unsweetened, shredded coconut
- ½ c. Coconut oil
- Kosher salt and pepper
- Heat oven to 450F.
- Place ½ c. Coconut oil onto a foiled, sheet pan and place into the oven.
- When oil is hot, place sweet potatoes onto the sheet pan.
- Season with salt and pepper and flip over.
- Season with more salt and pepper, making sure they are coated with coconut oil.
- Cook for 15 minutes until beginning to brown on the bottom.
- Flip sweet potatoes over and cook another 10 minutes to brown.
- Top with desired amount of coconut on each sweet potato.
- Cook for another 5-10 minutes until coconut is golden.
- Remove from oven and serve.
