DAY OFF

EdmondsThis summer I felt that we didn’t do anything like hiking, bike rides, travel or even going out. I was busy with my new job and new schedule that involved four days working almost eleven hours and three days off. At the same time that three days off sounds amazing and it is, I was always feeling very tired on my first day off and I couldn’t enjoy or do everything that I wanted to do. To add to this new schedule I started a photography class that was  once a week all day and it made me feel that there was no time left to do anything else. I wasn’t very happy with all the changes that my new job brought to my life, so I quit the job and started another one with a schedule that was more flexible and that’s why little by little things are coming back to “normal” and we went  out to have happy hour in beautiful and warm Seattle. We went to Edmonds, a small city that takes twenty minutes from downtown Seattle. Edmonds is so cute. There’s a beach, local restaurants and a ferry that takes you to small islands on the other side of the ocean.

We went to Girardi’s Osteria to have happy hour and we found an extensive menu with good prices for food.

Our favorite was the fish tacos and the rockefeller oysters.

While we were enjoying one of our favorite things to do in life (food+drink= happiness) I was telling Marilyn about the post that I read on one of my favorite blogs “A CUP OF JO”. I read this post how you describe yourself in five words that made me think for days. I think it’s hard to define myself in 5 words. Isn’t it?? Can you do that?? I would say that I am Chloe and Julia Child’s mom, Marilyn’s partner, a Seattleite, a blogger and a dreamer.

Brazi Bites Jalapeño Popovers
Ingredients:

1 bag Brazi Bites, defrosted

4 ea. Jalapeños

2 oz. shredded mozzarella

1 oz. cream cheese

1 T. Green onions, diced

Directions:

Cut the ends off of the jalapeños and slice down the middle.

Clean out seeds and place flat side down onto a sheet pan.

Brush lightly with oil and broil in oven until skin blisters. 
Peel the skin off of the jalapeños and small dice.

In a medium bowl mix diced jalapeños, mozzarella, cream cheese and green onions until combined.

Place Brazi Bites onto an oiled sheet pan. With your finger, press down into the Brazi Bite to create a small indentation in the top.

Place 1/2 tsp. Of the jalapeño mix in the indentation.

Place in a 400F oven and bake for 15-20 minutes until golden.

Serve warm.
