So…I’ve been reading so many articles about how in 2015 kale and bacon are “out”. My feeling is this…of course there are so many “trends” in food that occur every year. They may be restaurant trends, food trends, ….it’s endless. I agree that there are so many different foods that we are introduced to all the time that we need to embrace and blend into our recipes. But, that doesn’t mean that we need to let go of the classics… this is why I decided to post this recipe. Kale is full of vitamins, minerals, oxidants….it’s so healthy and delicious..done…Let’s talk about bacon. If you don’t eat meat…no discussion…if you do…I’m sorry, but this is one of the most delicious, most flavorful and most addictive foods ever!! It it the most amazing food “additive” that nature has made. So…You can take this post for what it’s worth.
I decided that I wanted to take a classic salad that we posted last year, and update it with these “out” ingredients that we supposedly don’t want to eat this year. Let us know what you think about this and your opinions about kale and bacon being “out” for 2015.
Add 1 c. sliced kumquats
Soft goat cheese
1-2 lbs kale. stripped from the stem, cleaned and chopped
Combine bacon dressing with the lentil mix. Place warm lentils on top of the chopped kale and top with goat cheese.
