Everyone should have a recipe on hand for a quick dinner that’s healthy and tastes delicious. We have one that we love so much: quinoa stuffed mushrooms. We have done it before with shrimp and this time we made it totally vegetarian with all the veggies grilled and to go along with it Marilyn made a chipotle avocado sauce. It added just the right heat on this delicious dish! We’ve been using this sauce (leftovers) for our eggs in the morning and also for a quick sandwich spread. I can’t forget to mention that we have also a plain portobello mushroom recipe that is marinated in balsamic vinaigrette and herbs and because of this recipe I fell in love with portobello mushrooms.
Any veggies that you can roast or grill (we used yellow and green zucchini, green beans, bell peppers)
Kosher salt and pepper
Fresh tomatoes, diced
Chipotle peppers in adobo sauce
Preheat the oven to 375F. Clean the mushrooms by taking out the stem and scraping out the gills. Season the portobello mushrooms with salt and pepper and drizzle with olive oil. Bake in the oven until mushrooms begin to soften, approximately 10-15 minutes. Set aside. To make the quinoa, bring 4 c. vegetable stock to a boil and add 2 c. quinoa. Cover and cook until just done with still a little “bite” and liquid has been absorbed, 15-20 minutes. Set aside.
Grill the veggies of your choice, then dice or slice to desired size. Mix the grilled veggies with the quinoa and season with salt and pepper. Fill the portobello mushroom with the quinoa/veggie mix and top with feta cheese. Put back into the oven and bake until warmed through and mushroom is softened through, 10-15 minutes.
Serve on top of the chipotle avocado sauce and sprinkle diced tomato around.
CHIPOTLE AVOCADO SAUCE
I used amounts based on the fact that I love spice! If you would like this sauce less spicy, use less chipotle.
2 chipotle in adobo, plus 1 tsp. of the adobo sauce
1 1/2 avocado
1/2 c. sour cream (we used lite)
juice of 2 limes
1 tsp. minced garlic
salt to taste
Place all ingredients in a food processor and blend until smooth. Adjust to your taste by adding more/less of your favorite ingredient.
