Last week I got a cold and I was feeling very sick. This has never happened to me before, not that I remember,…but my body was asking me to eat pasta. When Marilyn got home from work I asked her to make some type of pasta. She was soooo surprised with my craving because I never ask her for that or when she suggests making pasta I am always refusing it. So, she jumped into the kitchen and made this delicious chicken wrapped with proscuito and a healthy pasta with a lot of vegetables. It was soooooooo good!!
I make this chicken all the time. It’s great comfort food and when paired with this pasta….wow!!
I bought a whole chicken and butchered it myself. Save the bones and carcass for stock !!
2 chicken breasts, wrapped with 1-2 pieces of prosciutto each
2 chicken thighs, bones removed
salt and pepper
Preheat oven to 400F. Heat olive oil in large skillet on medium high heat. Place seasoned chicken skin side down in hot pan. Cook until skin and prosciutto begins to crisp. Place skillet in oven and cook for 4-5 minutes.
Take a look and then flip the chicken over to cook flesh side down. Cook for another 4 minutes. The thighs will be done before the breasts. Remove the thighs and leave the breasts to finish cooking, approximately 4-5 more minutes depending on size. Remove and set aside with the thighs to keep warm until pasta is done.
I used dried pasta for this dish, but you could use fresh as well and of course, I used more of those great fall chanterelle mushrooms!
Use whatever amounts of pasta and vegetables to your liking…We made a larger amount and had leftovers!!!
dried or fresh pasta of your choice
diced roma tomatoes
fresh chopped oregano
salt and pepper
Cook pasta in salted water until al dente (6-8 minutes for dried)
Cook chanterelles (here) and set aside.
Heat olive oil in a sauté pan on medium. Sauté garlic and shallots for 1 minute. Add pasta and sauté for 1 minute. Deglaze with approximately 1/2 c. white wine and reduce. Add chicken stock (enough to make pasta a little saucy), mushrooms, tomatoes, oregano and 2 T. butter (or more to your liking). Reduce sauce and add spinach and grated parmesan. Season at the end. Plate your chicken and pasta and grate more cheese over your pasta!! Delicious!!!
